I go to a pepper show once a year so pick them up there. A lot of vegetable catalogs have a good section these days. What are you looking for?

http://www.pepperjoe.com/ A bit expensive, but high quality.
http://www.chile-pepper-seeds.net/varieties.htm Also high quality & a bit better priced.
Every year I make up about 20 pints of Chipotle pepper sauce. I let a 50 ft garden row of jalapenos vine ripen red. Then, smoke them over mesquite, in a drum type smoker.
Once smoked, I dry some in a dehydrator & powder them. For spicing up about any Hispanic dish.
The rest, I puree/mince coarsely in a blender. Then, add jalapeno pickling juice, lime juice & some tequila. Jar up, and can with a PC.
Great stuff. I gave some to the owner of a popular Mexican restaurant. And, he said nothing like that this side of the border. Gotta love those peppers. They make chili...into CHILI

http://www.foodsubs.com/Chilefre.html
My vine ripened THAI Chili's. Once peppers are mature & red. I pull up the whole plant. Hang the plants upside down in the garden shed. Until cracker dry.
These will put POW, in Kung Pow chicken. I assure you.
Also, something you seldom see: HOT CHILI OIL
Ground Thai (or you favorite hot chili peppers). To a fine powder. (careful of dust when you open blender, it will burn your eyes) Fill a pot 1/2 full of Sesame seed oil. Stir in as much chili powder as you want. (at least 1 cup full) Steep on VERY LOW HEAT several hours. Stir every now & then. (powder will settle & scorch, if not stirred often)
When oil turns a light red. Use a funnel & pour oil & sludge into a large glass container. (1/2 gallon whiskey bottles work well)
Add a little salt, onion & garlic powder to the container. Store container on shelf, to marinate/meld flavors. Agitate the container every so often. After a few weeks, stop agitating the container. Allow to set a week, so solids will settle to bottom.
Carefully pour off oil & filter through double coffee filters. Into clear 750 ml wine bottles.
Add a few clean dry chili's to each bottle. Hint, make a needle hole in each dry chili you add. So, they will eventually saturate with oil & SINK. Cork bottle.
Once chili's have sank. Remove cork & replace with liqueur shot dispenser top. Content is now ready for use.
Great for adding POW to stir fry. Or, any Oriental/Mexican dish you want to add POW to. Hot oil will make scrambled eggs or an omelet into a spicy hot surprise dish, LOL.

1.04M SHU Hell no. Nor, would I want to. Thai chili's are about my limit. And, I have a considerable tolerance thresh-hold.

I only make a small amount of oil, like a cup. Because I'm worried about botulism.

Chili's are sun dried, roasted, smoked, dehydrated; then powder is simmered in hot oil, for hours.
You stand a better chance of getting botulism. From a can of tomatoes bought at your local grocery store. Or, from tainted food, at a restaurant. Than from chili oil prepared as above.

I'm sorry forgive me, you're right. I was reading in my Sevsafe handbook, it has to do more with frash stuff. Being in oil, that has to do with botulism.
