Medicinal Extraction Question

Does anyone know at what percentage alcohol content the alcohol soluble polysaccharides/constituents are extracted?
I am wondering about doing low alcohol extractions.
Specifically a method being developed by my friend in Maine called Bio-regional Tinctures.
It is a process by which water extractions of plants/mushrooms are preserved threw natural fermentation, with yeast and honey. The resulting "brew" has an alcohol content ranging from 5-9%. This can be used as a base for alcohol extraction of various plants, creating a very powerful elixer.
I am wondering about using this method with mushrooms. So far the water extraction/fermentation seems to be working well, but I wonder if the alcohol content is high enough to extract the constituents from mushrooms.
Any info is greatly appreciated.

Since people seem to have success extracting reishi in tea, my guess is 5-9% alcohol to no alcohol works if heat is added. There might be something to be said in that not every medically active compound is extracted in a tea prep, but that might be the same for a 200 proof alcohol prep as well. The answer to that question would be what solvents dissolve each active compound and I don't even know if all of actives in something like reishi have been characterized.
To answer the question in your first line "at what percentage alcohol content the alcohol soluble polysaccharides/constituents are extracted?" I would guess the amount you list is fine. The problem as I understand it is you have so many actives that your alcohol becomes fully saturated and can't hold any more. Ethanol is a good solvent, so my guess is you will be fine. At worst you'll get as many actives as the ethanol will hold, and that alone I think would be a load of the active compounds you're wanting.
