my pc dried out (bangs head)

So I soppose I got really lucky. I did 2 big o bags, i put a good amount of water in there too, over 2 inches. With the bags in the water level was at least half way up the pc'er.

Being bags so big I cooked for 2.45 hours. Having not cooked for this long before I was really watching it well. I was planning to cook for 3 full hours, but about 10 mins before, my pc stops chattering so im like oh shit and run turn off the heat. I left the weight on it to hold moisture in.

So I open up and their is just a tiny little puddle of water in a corner, I swoosh it around and it is just barely enough to wet the entire bottom.

So I think I saved it but it was dam close. My clothes pins fell off my bags and they opened up and I think they got sucked up into the release valve purhaps as well. With all the steam coming out I closed my bags up quick and I repinned them. I assume they are still sterile but im sure im fucked with my luck.

and oh dam its one thing to maybe loose a few bags after 3+ hours of labor but ill be one redneck if i loose my pc.

Next time, when the PC reaches 15 psi, turn down the stove to the minimum setting that will maintain pressure with NO chattering or rattling of the weight. The weight is only there to releive excess pressure, thus every time it rattles, it releases steam(water) from the PC. You can easily do a four or five hour cycle without running out of water, should you wish.

WORD . you must learn what is the lowest setting you can keep the stove at and still keep 15 psi and really if your Cooker Chatters at 15psi then run it at 14psi just so long as its not leaking steam

there should be just as much water in the cooker when you are done as when you started. One thing that may help you is i find it best to let the cooker come to a rolling boil for 5-6 min before i put the weight on after it will come to presser fast and you can quick start backing off the heat and get it stable , i have also heard that its good to the the cooker come up to a boil before you put the weight on to help vent out all the air ,some thing about a higher internal temp if it just pressurized steam inside but i don't know about that.

You should let the steam vent for ten minutes before putting the weight on. This is to allow the surface of all the jars to come up to temperature. If you fail to do this, you may have 15 psi, but at least part of that pressure will be air pressure, not steam. This is referred to as 'overcoming thermal inertia'.

Yea,I always turn it down so it only rattles once every min or two,om my burner its setting number 6,hardly wastes any water at all

my stove has 4 burners. Three of the burners only have one setting: Really motherfuckin' hot. The first 2-3 times I tried to PC jars I ran out of water in under 45 min, but I finally figured out which burner works best and on what setting, and now I can easily PC for 2-3 hours without any problems. Good luck :smile:

Good points. I had pretty much cooked my grains several times before reading someplace to TURN THE BURNER DOWN. Once I did that, there was no running dry. Medium-low keeps a constant steam without rattling.

Glad your bags didn't melt, and with any luck the grains didn't get cooked too dry.

It's so important to know how to use your PC properly. For me it's straight to the Medium setting when the weight starts rattling.
