Shiitake-Lentinula Edodes 75 vs Lentinus Squarrosulus

A few of you have asked for gill shots and a comparison between these two, so here ya go. Both grow as large as portabellas on Alder sawdust supplemented with wheat bran and gypsum.
Both of these Shiitake cultures came from alohamedicinals.com
Lentinula Edodes 75 on the left, and Lentinus Squarrosulus on the right. The LE 75 definitely grows a thicker, meatier fruit, but both are great rubbed in blue cheese or Ceasars salad dressing and cooked outside on the BBQ grill along with the T-bone steaks.(sorry vegans, I'm a carnivore) RR

very nice. im looking forward to growing the LE 75 strain. i think i'll use the peroxide method since i only have a 7L PC for sterilization.

When I go on specialize markets to sale my mushrooms, criterias have to be respect to get the higher price for them.
A personal reflection on some of these mushrooms: Photo 1: First mush on the top left could be rank for a first or second class quality. The second one (Top right), in the lower class loosing at least 50% of the good prices. The reason: The end cap is wide open not in roll at all. This mushroom has been harvested to old.
Photo3: Second class. Photo 4: Seem to be the same mush as photo 1.
For who would like to go on high rank markets. Shiitake has to be around 3-4 inches diameter, dark brown, short stem and caps completely thigh in roll to get the best prices. All the others fall in prices. I usualy sale the second class on farmers markets. Poeple don't really see the differences so I anyway get high prices for them. I don't sale other class as fresh mush, I dry them.
Tip: Check the growth of your shiitake twice a day. Keep about 6-12 shiitake per 6 Pds block. Don't keep shiitake growing to near each other. Hoping that could help you evaluate the quality of your shiitake.

I grow a lot of spawn, but finished mushroooms are just for the family, so I let them get bigger since they don't have to be shipped or stay fresh in stores. We like them larger because the taste seems to be milder, and they do great on the outdoor grill. I only keep 4 to 6 fruits per block so they can get larger.
If I was selling them at market, I'd have to do as you say. RR
