Hedgehog Heaven Pt. 2

Recap: three weeks ago we went to our hedgehog grounds and came back with these...and that's all. Very disappointing
 This was the total "bounty" plus an admirable bolete

Today we just got back from three hours in the rainy woods, got partially soaked through but the temps were very mild so it wasn't so bad. Here's what we came home with tonight:



Did I mention we made two stops on the way home to drop off fresh hedgehogs for our friends and family? That's right, this is only one half to one third of what we really took out of the woods

We also always find a lot of yellow foot chanterelles (cantharellus tubaeformis) near our hedgehogs. Anyone have any recommendations on the yellow foot? Is it really edible or just sub-par? Just curious.

lovely finds, i suggest the cantharellus fried up with some yellow rice olive oil and trout.

At the rate we're going there won't be a need to can! Just had some sauted on toast...now we're working on the risoto. Tomorrow will be mushroom pizza. What is actually involved in canning? I've never done it before. Are you talking about pc'ing?

You basically put the mushrooms in jars with salt water and pressure cook them. I've never done it myself, but i have had canned mushrooms and they were good. It works better for some species than other, and i have heard Hedgehogs preserve really well that way.

Forgive my naivety, but what can I do with canned mushroooms? Same as if fresh? This sounds very exciting!! I know how to use a pressure cooker

canning, including pickling and brining [as in other produce and meaats] just a method of preservation [in the case of pickling and brining sometimes with a twist, e.g. adding herbs/spices]. canned mushrooms will tend to be rather watery and will already be cooked, so care wil have to be taken in preparing them to preserve the desired texture for the dish you plan to make. this will also vary from species to species. it just opens up a different approach to cooking with mushrooms in addition to keeping them around longer. just s dried mushrooms will often have different applications than fresh and canned tomatoes would be used differently than whole ones [wouldn' be great in salad for example ] you will want to use them in ways that accent thier new form.
braniac: Cantharellus spp. = the chantarelle, Hydnum [often Dentinum] repandum = the hedgehog mushroom.
