A week late and a dollar short... Manicotti by Stein

Okay, lets make sauce.

Tomato's, garlic, a mixture of salt, pepper, oregano, and basil.  I went equal portions of each.  About 1 teaspoon of each.


If you're like me and love the tomaters you'll wedge one out for salt and peppering.


Slice em dice em however you want.  We're gonna puree` them later anyway.


Start your onion and garlic in a lightly sprayed sauce pan.


After they're all sweaty throw your tomatoes in.


Top it off with your spices


Cover and let simmer for 20-30 minutes


Now you're gonna end up with a watery mess


This is when we break out the handy dandy Ronco mixing wand and puree` the mixture into a wonderful delight.


Now the pic doesn't really show well but home made sauce doesn't take on that traditionally red look.  It's more brown but tastes better.


Get your noodles going in some lightly salted boiling water.


Now, that sauce recipe is basically vegan, but if you're like me every meal requires a side of meat of some sort.  So get some ground beef and Italian sausage browning in a separate pan.


While the meat is cooking strain your noodles and get your cheese ready.  This is all mozzarella with a quarter part hard/shredded parmesan.


Filling these guys with cheese is a tedious task.  You don't want them to tear.  I was able to salvage three out of six.




Strain your meat and add it to your sauce.


Pour some of your sauce in the bottom of an oven roasting pan and plop your cheese filled noodles on top.


Throw some more of your cheeses on

 
Top with more meat sauce and cheese. 


Bake at 350 for 25 minutes and eat.


My camera lost power so I have no finished product :sad: but I assure you it was delish.

Also, sorry the pics were saved at an unusually large size.

A thought occurs - why not stuff the manicotti while they're still dry?  Then there will be little chance of them cracking at all.  Just up your baking time a smidgin, place the manicotti on the bottom of the baking dish before you throw in the sauce, and perhaps cover the dish with foil to keep extra moisture inside.  I used to bake those spiral pastas raw all the time with marinara sauce, the manicotti should work the same way!  I suppose the longer baking time may encourage some of the cheese to melt out of the manicotti though.. but hell it's worth a try, even a sloppy dish with those ingredients should taste damn good :grin:

I think that would work just fine.

The only thing I don't like about that method is you get all the noodle starch in your dish.

Boiling takes alot of the starch out so you're don't get that super I feel sick full feeling like you get when you eat at any casino buffet.

Those buffets fill their foods with so much starch you get full fast and never get your bucks worth.

I've used those same ones and it does say to pre boil them on the directions. I think I had 2 of six not break.

Now if you are a real cake head you can use one of those froster bag thingies and fill it up nice n easy.

Im in...

Any chance to make sauce from scratch is just what the doctor ordered.

Ever try and fill them with meat and cheese? Or cottage cheese/dry cheese mix?

I had a manicotti fish dish once before. It was with a white wine sauce and it was delicious.

One note:

salt it to taste

my sauce was a little too salty so use less and add until happy

my pops used to do the cottage cheese and meat but I've never been able to replicate it

Well, I've made it twice since my last post. Both times have been great. Unfortunately I don't have pictures as my camera suffered an untimely demise(that's why my posting in here has been slacking).

Once I get a new one I will make again and post with pictures.

I was thinking that maybe chilling the noodles would help in the process of filling them. They would be more firm and might not rip as easy. I'll give it a whirl sometime.

I used a baby spoon and took my time.  Worked out pretty good.  Definitely not as easy as piping in a more traditional filling(ricotta, egg, parm, herbs).

P.S. - My grandma would have a fit if I called them manicotti.  Always cannelloni :smile:
