which oyster

Im starting my commercial venture, im geting the 4 species grab bag from sporeworks im geting enoki, shaggy mane, but which oyster should i get i already have blue oyster,white, and pink...what other species should i have on hand for my venture, i have shiitake, reishi, lions mane, garden giants, what all should i be produceing in general i need to do more market research but just generally asking...

Don't know if this will help or not, but all of the Oysters I've seen in local markets appear to be Phoenix. I would think that Golden's would sell well due to their nice coloration, but I don't know if there is any big taste difference b/w the different Oysters.

Not sure about the other Oysters but I've had pink before and they look great and taste great (as long as you cook them)! Uncooked oysters, as I'm sure most know, are horribly sour/bitter.

I think yellow oysters when cooked fairly crisp are the tastiest of the oysters. I don't think yellow oysters sell well, most people do not know how good they taste.

Yes yellow and eryngii are by very far the bests oysters. Yellow are easy to sale if you can keep them in one piece. They are so fragile that they brake during transportation and manipulations.

Strangladesh: What is your market? What kind of equipment do you have to produce?

The Phoenix is supposedly one of the tastiest of the Oyster strains. I'll let you know in a couple weeks. lol

well I'm in mid Michigan right by Lansing i already have a licensed distributor lined up, just trying to get some samples around to start visiting some local shops/restaurants

i went with the phonix because well taste is the most important to me and my customers lookes is second but thats why i have to pink,blue and white oysters...

ive been growing for about 5years now, i started out on the Drool donkey forum. i have a nice 12quart pc, big glove box, fridge to store spawn in and a nice big closet with multiple tubs for fruiting...ive grown garden giants, pink oysters, and tons of cubies...

might also consider which will give you more in return, although the pheonix and pink taste great, they rearly get more than 3 tiny flushed. i have found the regular or brown species oyster give better performance.

that is a good sugestion but i also have 3 other strains of oyster wich are doing very well know...the blue oyster is eating up my wood chips pasturized in sandwich bags...

I could be wrong about this, but you might want larger than a 12 quart pressure cooker if you're going to go "commercial" as you say. At the very minimum, I'd get the largest All American Cooker, 41 quart I believe.

yah in the future but i can pruduce quite a bit of spawn at a time...but yah you can never have enough spawn...
