One is a standard Pumpkin Pie the other is a pumpkin cheesecake pie  :crazy2:

I made everything with the same stuff I bought to make the pumpkin bread and Ive got just enough to make a second loaf soon.    :thumbup:





Pumpkin Cheesecake Recipe

Pumpkin Cheesecake

Crust
1 1/2 cups graham cracker crumbs
1/3 cup butter or margarine -- melted
1/4 cup granulated sugar
Cheesecake
24 ounces cream cheese -- softened
1 cup granulated sugar
1/4 cup packed brown sugar
2 eggs
1 3/4 cups solid pack pumpkin
2/3 cup evaporated milk
2 tablespoons cornstarch
1 1/4 teaspoons cinnamon
1/2 teaspoon ground nutmeg
Topping
2 cups sour cream -- room temperature
1/3 cup granulated sugar
1 teaspoon vanilla extract

Crust: Combine graham cracker crumbs, butter and sugar in a med. bowl. Press
onto bottom and 1" up side of 9" springform pan. Bake in preheated 350 degree
oven for 6-8 min. Do not allow to brown. Cool on wire rack for 10 min.
Cheesecake: Beat cream cheese and sugars in large mixer bowl until fluffy. Beat
in eggs, pumpkin and milk. Add cornstarch, cinnamon and nutmeg. Beat well. Pour
into crust. bake at 350 degrees for 55-60 min., until edge is set but center
still moves slightly.
Topping: Combine sour cream, sugar and vanilla in med. bowl. Spread over surface
of warm cheesecake. Bake for an additional 5 min. Cool on wire rack. Chill for
several hours or overnight. Remove side of springform pan before serving.


Pumpkin Pie

Ingredients:

    * 3/4 cup granulated sugar
    * 1/2 teaspoon salt
    * 1 teaspoon ground cinnamon
    * 1/2 teaspoon ground ginger
    * 1/4 teaspoon ground cloves
    * 2 large eggs
    * 1 can (15 oz.) LIBBY'S 100% Pure Pumpkin
    * 1 can (12 fl. oz.) CARNATION Evaporated Milk
    * 1 unbaked 9-inch (4-cup volume) deep-dish pie shell
    * Whipped cream (optional)

Directions:
MIX sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.

POUR into pie shell.

BAKE in preheated 425° F. oven for 15 minutes. Reduce temperature to 350° F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. Top with whipped cream before serving.

NOTES:
1 3/4 teaspoons pumpkin spice may be substituted for the cinnamon, ginger and cloves; however, the taste will be slightly different. Do not freeze, as this will cause the crust to separate from the filling.

FOR 2 SHALLOW PIES: substitute two 9-inch (2-cup volume) pie shells. Bake in preheated 425° F. oven for 15 minutes. Reduce temperature to 350° F.; bake for 20 to 30 minutes or until pies test done.

FOR HIGH ALTITUDE BAKING (3,500 to 6,000 ft.): Deep-dish pie- extend second bake time to 55 to 60 minutes. Shallow pies- no change.

Pumpkin pie is the only pie I will eat. I eat it up to the crust and give my scooby the end skew. I hate crust.

I hate pie, cake, doughnuts, and all those heavy peices of bread covered in sugar sauce.

That pumkin cheesecake sounds interesting. Never had that one before.
