 2006.05.28 - Santori Apple Walnut Cake

No one's been posting, and I just recently came across something amazing. Here's an early entry to make up for all you late stoners. It's excellent for the munchies.
3 cups sugar
2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 1/4 teaspoons salt
3/4 cup vegetable oil
3 large eggs
1 1/2 teaspoons vanilla
4 large Granny Smith apples
1 1/2 cups coarsely chopped walnuts
3 cups all-purpose flour
Preheat oven to 300°F and butter a 13x9x2 (or something similar) inch glass baking dish.
Mix sugar, baking soda, cinnamon, and salt in a large bowl. Whisk in oil, eggs, and vanilla until smooth. Peel and core apples and slice about 1/4 inch thick (there should be about 6 cups). Add apples and walnuts to batter and stir until coated well. Stir in flour (best done one cup at a time) just until combined well and spread batter evenly in baking dish.
Bake cake in middle of oven 1 hour and 40 to 50 minutes, or until a knife will come out clean when inserted, and cool completely in baking dish on a rack. Cake keeps, wrapped in plastic wrap and chilled, 1 week.
Serve with ice cream, etc.
