filipino egg rolls - recipe as promised on IRC :P

ok here u guys go...please note this is like an american-filipino recipe so you don't have to prepare the meat inside the eggrolls just roll raw and fry...meat will cook by itself. freezable as well (this is for a large batch). you don't even have to roll the traditional way...this recipe was made cause filipino mom's couldn't be arsed to roll eggrolls for big parties so it's slackish :smile: but tastes good (much better in my opinion)

3 lbs minced (grounded) pork
4 tablespoons soy sauce
8 tablespoons brown sugar
1 tablespoon salt
? teaspoon black pepper
3 eggs
2 tablespoons minced garlic
1 can water chestnuts diced
1 small onion diced small
1 carrot diced small

2 packages of large eggroll wrappers
bowl of water or heat up 1 tablespoon of flour with some water to make a paste (this will be used to close up the eggrolls when u're rolling)

instructions
- combine all the ingredients together, use your hands to throughly mix everything

to wrap
- take a wrapper
- put some filling towards the end of one side of the wrapper.
- then just roll it, put some water or flour paste at the end so ti's secure
- it'll be one large eggroll so just cut with a sharp knife into 3 pieces.

they look like this if no one understands what i'm saying :grin:




then just fry this until golden brown.

dip in sweet and sour sauce

Yum, another dipping sauce I like to use for that type of eatery is a conglomerate of common sauces:
  • Soy Sauce and/or Teriyaki Sauce
  • Oyster Sauce
  • Seasame Oil
  • Thinly sliced green onion or chives and/or thinly sliced garlic
  • Red Chili Paste or Chili Garlic Sauce or Sweet Chili Sauce


Just adjust the amounts of any ingredients to your personal taste. I often prefer this this to sweet 'n sour because it offers considerably more spice and substance (depending on how you make it), and spice is nice!

That is the coveted asian "secret sauce". Use it to dip into anything dim-sum. Shu-mai, chashu-bao, egg rolls (or as geo calls 'em, mysterious tamale-like things), chinese pork meatballs, and of course, dump it in some pho.

LOL! :wtf: .. I can't ever recall referring to an eggroll as a "mysterious tamale-like thing"
haha - you've just earned yourself a new username, perhaps the most fitting yet! :smirk:

Enter: it is true I have a passion for food, I do enjoy experimenting in the kitchen, and I do cook regularly - nevertheless, I have much to learn if I am going to follow my passion and ultimately start or help start a casual restaurant some day on a beach somewhere (at this point, I'm thinkin' the surf-city of Jaco on the pacific side of Costa Rica).  Anyone can come up with half-baked ideas as to what flavours may go well together, but it really comes down to actually giving it a shot and trying it yourself.. I've made plenty of goofs in the kitchen to be sure (and still will!), and of course each palette will have its own favorites, but it's all a learning experience - as is anything in life. 

Now get your ass in the kitchen and dream up some dishes! :heart:

Thats the greatest thing to being a good cook..

Casual restaurant on the beach.. Now thats a plan.. Ive thought time and time again about opening my own deli/pizzeria. Ive worked at a few great ones and have great connections on fresh produce and meats and I know that people will drive cross town for a good sandwich.

Everything fresh and handmade is the key. I would use an Alto Sham oven to slow cook real turkey breast, pork and my own herb garlic roast beef recipe. Add BB-Q tri tip and half chickens, a big selection of cheeses and at least 10 breads to choose from and youve got a money maker.

Sandwiches are a lunch thing, Pizza is a supper thing. Put them all together along with delivery and ice cream and your set...



Damn Geo, now youve got me thinking about this and trust me Ive thought about this ALOT.. My parents own several restaurants and I could open one easy.


Only thing is Im not interested in owning and running more than one and I make as much money now working a regular job as I would if I owned a restaurant.

Boo...  Is the fameous Lumpia recipe? 

I remember the API girls making them in the hall of the cafetirria at college and selling them for a buck each...

I started buying them just so I could talk to the hot asian chicks but then I kept on buying them because I loved them...

The Lumpis, not the Asian girls... :rolleyes: :rolleyes: :rolleyes: :rolleyes:

My wife is a filipina....trust me this lumpia recipe is close to the original....she put in some ginger....its is worth the work...I can eat like 30 of these things..

I also reccommend the sweet chili Thai sauce for dipping!!!!

1oz East Kent Goldings @ 15 mins
1oz Whitbred Golding Hops @ 5 mins
British Ale yeast
Ferment at 64F for two weeks.
14 years of brewing; the simple grain bills are the best!

Looking at that plate reminds me of some friends of mine.  The are both Thai but every time I went to their houses, their moms would force a plate of food on me. 

It didnt take much force actually..  The plates looked just like that pic, a nice mix of all sorts of things cooked in different ways..

Im moving back up north in two weeks and I cant wait to go visit them families and hopefully get to try some good Thai cooking agan.

I dunno man, I think the pork is pretty essential. My Filipino BFF uses celery instead of water chestnuts though.
