Hi everyone,
This is my first post.
I LOVE wild mushrooms and I've been testing the waters for several years now and I have several under my belt, especially those I find locally.
My latest find was a DOOZY. In a road divide that was recently planted with grass seed and sod that yielded a HUGE pile of shaggy white mushrooms that deliquesce easily. Shaggy Manes (Coprinus comitas) wasn't hard for me to ferret out the ID.
I've picked about eight pounds so far and the pound or two I've eaten have been WONDERFUL.
I did the quick saute at first which was good but then I stumbled on a post talking up the advantages of a one minute BOIL to stop the enzymatic deliquescing (it goes FAST.) That allowed for later eating and for freezing in packets. Something about the pre-cook enhances the flavor also.
I've done a nice cream of mushroom soup and a chicken-mushroom francaise kind of thing that was yummy.
(I apologize if my picture loading skills are behind the curve...it seems different for this forum.)

Maybe tomorrow I;ll hit the PhotoShop and try my hand at smallifying the files!

Ahh man... I haven't find any this season, and only a few in the spring.
I LOVE the shaggy manes!
You should try the mock flounder recipie. Delicious.

Welcome Trotsky. I am inspired to eat some now as I have been finding them on a regular basis. You have cut the stalk off just under the cap--is that what you should do with these?

Yeah, cut em at the base. I usually separate the cap & stem too as they cook differently. The stem's can be sauteed, and have the taste of buttery goodness, with the texture of steamed bamboo.
The cap is very hard to saute because it has a very soft, flaky texture, like flounder. It also has the taste of buttery goodness (when cooked with butter anyway...).

Great finds! And, you picked them at the perfect time.....once the caps start to open, and you start to see the "black" film at the bottom of the cap, they do not taste good IMO.

I have been finding a lot of shaggy's this season as well. They can sometimes get pretty big.

I usually fry the caps, and use the stems in soups.
