Cope-LAN-Dee-ah Sy-An-Nei-sens is how I've always pronounced it. I might be a bit wrong at the end of cyanescens though.

btw: Copelandia is hardly Latin. The genus was named by G. Bresadola in honour of the American mycologist Edwin Bigham Copeland (1873 - 1964) who gathered macrofungi in the Philippines. Presumably he sent his collections - among which was a blueing Panaeolus species - to Bresadola.
