I need your Salmon recipes!

I just recieved a huge Coho salmon and I need a great recipe. I want to barbecue it so perhaps a marinade or stuffing recipe...  :smile:

You should get a couple racks, cut the salmon length wise, and put both sides between the racks. Then get a wire and twist it around both racks so they are held together, so that the fish doesn't fall out.

Then put it above a firepit, fliping them and turning them around whenever they need turning.

Best fish I've ever had was done this way at my uncles.

alright, you can either poach or grill it.

i say grill it over medium. i'd go with a lemon butter dill for salmon. marinate for an hour to overnite depending on taste. i like an hour or two cause i like the taste of straight salmon. grill over medium skin side down (no flipping) for around 6-8 min per inch of thickness, or until light pink and flakes easily with a fork or knive. thats pretty much it.

For some reason when I saw the name of this thread I read "I need your Salmon reciepts."

This makes a lot more sense however.

but here ya go for da hell of it
Salmon in Vodka Cream Sauce with Green Peppercorns

8 tablespoons butter
1 onion, thinly sliced
1 pound spinach
6 6 ounce salmon fliets
salt and freshly ground pepper
3 tablespoons olive oil
1 1/2 cups whipping cream
1/2 cup vodka
2 tablespoons green peppercorns in water, drained and crushed
3 tablespoons fresh lime juice
1/4 cup snipped fresh chives

Preheat oven to 350F. Combine 4 tablespoons butter and onion in
large Dutch oven. Cover and bake until onion is golden brown,
stirring occasionally, about 45 minutes.

Stir spinach into onion and bake until just wilted, about 3 minutes.
Remove from oven; keep warm.

Season salmon with salt and pepper. Heat oil in heavy large skillet
over high heat. Add salmon in batches and cook about 3 minutes
per side for medium. Transfer to platter. Tent with foil to keep
warm. Pour off excess oil from skillet. Add cream and vodka and
boil until slightly thickened, about 4 minutes. Add green peppercorns
and remaining 4 tablespoons butter and stir until butter is just
melted. Mix in lime juice, season with salt and pepper.

Divide spinach and onion mixture among plates. Top each with salmon
fillet. Spoon sauce over. Sprinkle with snipped fresh chives.

i like those little fried salmon patties. it's a pretty basic recipe...just some binder ingredients, some flavoring and some flaked up salmon formed into patties and fried in a very shallow pool of oil. i don't have the recipe on hand, but if you haven't cooked it by the time i find it, i'll post it.

A little
  • thyme
  • e.v. olive oil
  • salt
  • pepper
  • cayenne pepper
  • finely chopped onions
  • country style whole grain mustard
works well with salmon.  Grill either wrapped in foil (if your marinade is very juicy), or straight on the iron for that nice smokey addition to the cooking process.  Start with the grill on high to get the marks on your fish, turn down to medium-low once the fish is on the iron, and cook on either side for 3-6 minutes depending upon the thickness of your fillet.

Serve a spicy avocado salsa atop the cooked salmon which you can mix from
  • fresh avocados
  • fresh tomatos
  • cilantro
  • finely chopped red onion
  • juice of a lime
  • lots of salt & ground pepper
  • favorite hot sauce or fresh pepper (for desired spice factor)

Still hungry?  You may want to consider a nice pasta with a basil and grape/cherry tomato olive oil coating or even some grilled sweet corn ...

I made a glaze of
Orange juice
Maple syrup
Brown sugar
Herbs which ever you have fresh of
some mustard as well "country style or pub style are the best"

Now take the mixture and simmer to reduce.

Season fillets or steaks with salt and pepper
Heat broiler
Place salmon on tray and smother with glaze
broil till golden brown and flakey inside
serve up with lemon.

I recomend a potato salad with it or some steamed veggies.

take some salmon place it in tinfoil

put brown sugar and onions all over it, add some beer, wrap it in the foil and grill

my mom makes this unbelievably easy recipe which tastes ok

preheat oven to 350f
take half of a salmon and put it on tin foil
pat the fish flesh with salt & pepper
squeeze lemon juice and rub into the flesh
coat the top of the salmon with mayonaise and cook until some of hte peaks of the mayonaise turns brown and the juice is runnign...

maybe if you could spare a filet or half a filet, make gravlax!

Gravlax
1/3 cup salt
1/2 cup sugar
3 to 4 teaspoons crushed white peppercorns
3 to 4 pounds salmon fillet, preferably the middle cut, skin on
Lots of fresh dill

Mix salt, sugar and pepper. Rub the fish with the mixture. Add dill. Wrap in foil and put in a dish. Refrigerate for 36 to 48 hours, with a light weight on top of the fish. Turn the salmon several times.

Before serving, scrape off the dill and seasoning and cut into thin slices on the diagonal.

You could eat it straight or on bagels.

I've done a variation of this recipe, the only difference, while the salmon was broiling, I sauteed grapes(halved, seedless) in white while, then poured that on top of the salmon after it was done in the oven.........IT WAS SO GOOD, oh god, so good.
