you forgot the main ingredient, rice, corn, wheat or other grains, potato's or something. How about apple jack? use apples in place of about a third of the sugar and the grain.
Know about brandy and cognac yet? it's simply distilled wine
* check your local and federal laws, distillation of alcohol in any quantity may be illegal where you live

I might need to keep this in mind when gasoline prices exceed $2/gal.

In faerie circles perchance I might, hope Elven honey bread to find.
Over stream and tangled root I leap, o'er bough and slumbering badger's keep.
Under hoary oak and willow I bound, to find such groves as can be found,
the sating mushrooms; spring's delight, as gifts from figures of the night.

i've read that the distillation step is very important to do correctly because of the need to seperate the methanol from the good stuff...
but i've been reading up on the chemisty of fermentation and it doesn't seem that there should be any methanol to worry about. what gives?
and how does one construct a still?

During prohibition, people drank any type of alcohol they could get their hands on. Methanol was one of those, and the government uses it as an excuse to stay away from moonshine. NO METHANOL IN MOONSHINE...
*edit - moonshine isn't a term given to any redneck-ass mix of sugar, yeast, and water, its the term given to the liquid after distillation. As for death during prohibition, refer above. If its got methanol in it, it hasn't been fully distilled. You have to use a process called fractional distillation, this is in essence what you will have to do. Heat to 65-70?C and discard what you get from the distillation.
Heres where methanol comes from: IMPROPERLY MADE MOONSHINE! With proper pasteurization of any fruits used, you will have close to no methanol.

why do distillers aim to stay away from the 'heads' and the 'tails'?

TheInvizibleMan what you just said is very bad, You could get someone hurt... methanol is made during fermentation but is not in high enough concentrations in undistilled beverages to kill you... But when you start distilling the concentrations go up (obviously) methanol and ethenol alcahol both boil at different temperatures, so in order to separate the 2 you must bring you still up to the temp methanol boils at (which is lower then ethanol) and hold that temp for awahile (can't remember exactly its been awahile) and dispose of the shit that comes out during this time... Then distill the rest... methanol is not safe it is poison, You will know how much is in the alachol the next morning by how sick you are
I advise you goto google and search for methanol to get the facts b4 you blind yourself... OR DIE!

if there is enough methanol in 4 shots of *improperly* distilled moonshine to get you hurt, there should be enough methanol in 4 beers to do the same. concentration should have little effect...
