Tin foil and tape the foil well so no steam escapes. Also cover the top with a blanket so it insulates the heat loss.
It's what I would do.

Yes, the longer it takes for the temp to drop the longer the pasteurization period will be. I've done this once and it was still warm 24 hours later. I repasturized in quart jars a few days after so I'm not sure how well it really worked, but coir is a pretty forgiving substrate.

tin foil will not work.
A tight fitting makeshift Tin foil lid WILL work and has worked for me
Lets say you pour boiling water 212F into your sub/bucket
-temp drops immediately to maybe about 190F
(140F is on the low end of the pasteurization temps) it will take plenty of time for the 190F sub to cool below 140F in an insulated bucket with a tight fitting tinfoil lid.

I used maybe 10 cents worth of tin foil if that, and i didn't have to go drive anywhere at the time.
I get buckets with lids for $3 a piece from the local sandwich shop. I guess thats what they get their pickles in.

Or pizza places. They get stuff like yellow peppers in them, and the lids are tight as hell with a gasket and everything.

Yup I have gaskets on mine too. I had to cut an inch hole and stuff it with polyfill because the seal was too tight, the lid and the bucket were warping.

the pressure is key to cooking the coir.
in my opinion.
you cannot achieve pressure with a tinfoil lid.

I put my coir in a pillow case and just put it in a big pot on the stove for about 1.5 hours. Just make sure it is submerged and try to keep the temp in the 140-170 range the whole time. Works just fine for me.

I'd guess a lot of "good stuff" is lost personally. A lot.

Pillow case method is a poor one for manure it leaches into the water you pour out. I'm unsure if this is true for coir though..? Try checking out this way of Pasteurizing RR Video
Pasteurizing should be done for 60-90 minutes at 140-160. Either way you have a lot of fudge room for the time allotted.
