Nobu's Miso Black Cod (and a side of pickled radish)

It's one of my favorite things to eat at Nobu.  So I decided to make the recipe at home.


At the restaurant he serves it either pickled radish or ginger, but with radishes in season I went with that.

Wash, trim off the roots and stems, quarter them.

The brine:
1/2 cup apple cider vinegar
1/2 cup water
1/4 cup honey
1 teaspoon pickling salt


Bring it up to a boil, let it cool, place into jar with the radishes.  Stick it in the fridge and let it pickle as long as you like.








Miso Marinade:

3 tablespoons mirin
3 tablespoons sake
1/2 cup white miso paste
1/3 cup honey



Add the mirin and sake, boil off the alcohol, whisk in the miso until it dissolves, add the honey, dissolve.





Let it cool before you add it to the cod, and set aside about a quarter of it for glazing.


You want this to marinade for a good couple of days.  I personally would do it 24 hours minimum.


When you're ready to cook, pan sear one side of it just to the point of browning, then flip it onto a pan and broil at 400 degrees.







10 minutes into the broil, add the rest of the marinade as a glaze, and set to broil for another 10-15 minutes.

This allows the high sugar content of the marinade to carmelize on the surface of the cod.






Once it's done cooking...







Serve em together, the pickled radish was a nice acidic cut through the fatty cod.  It's great with a side of steamed rice.

Cod isn't readily available here. Is there a more common fish or Gulf Coast fish you'd recommend as a substitute?

It works with alot of different fish.


It works with salmon, talapia,  I would choose any kind of mild white fish with a high oil content.  Even Halibut works, but make sure not to overcook it as it dries easily.
