he obviously was to some point because he's referred to as the Son of Man, but he was also conceived of God. so what species does that make Him

From a non-christian standpoint he was human at most. i say that because there's no certainty that he ever even existed.

From my scholarly endeavors, I do believe that Christ was a human.
From all that I have studied, you really don't see the modern magical non-human Jesus until after Emperor Constantine (Saint Constantine ) adopted Christianity and his son made it the official religion of Rome, and the first council of Nicea was appointed (A lot of these new head bishops and what not being generals and politicians if I remember correctly ) And a new more secularized, Roman relevant version of the religion was established. (By all means, the Emperor himself was always thought to literally be a God and was worshiped, so they couldn't go around worshiping some mere mortal.)
I'd say do your homework (Like, really do your homework.) and formulate your own educated opinion.

Human or divine, being as well known as the Bible claims him to be then it would make sense that there was some record of his life between birth and his 30's when he really started his teachings. We know nothing about his childhood for certain except that he may have studied carpentry.

Am I wrong to say that there are verified historical records from well reputable historians that a man was crucified for claiming to be divine, around the time Jesus should have existed? I thought I remember learning something along those lines in a world religion class I took

Depends on your denomination. Some believe he literally was God (not the son of god but literally god himself), others believe that he was entirely divine and the son of god (0% human), some believe that he wasn't even physical and that the physical manifestation of jesus was just an illusion (less than 0% human 100% divine), some believe that he was the son of god and partially divine (maybe 50% human), and finally some believe that he wasn't divine at all but was still the son of god (100% human).
All of those are actual things believed by different Christian denominations, and I haven't even listed all of the different interpretations...

I personally think it was metaphorical to describe him as the sun, literally. Not the son like a child, but the sun like the giant star in the center of our solar system.

On the idea that god created man in his own image, I interpret it as god being this universe, and humans being bound by the physics of this universe.
