I had the oppurtunity to eat at his restaurant, Red Medicine, and sit down and talk to him, which was very cool and humbling. The conversation went longer than I ever imagined, and he basically talked about working in the industry and how hard it's been for him to break the mold of going from a pastry chef to establishing a full dining restaurant.
This was also right after he had made news for kicking out the LA Times food critic, Irene Virbila. Pretty funny.
Anyways, the true perk about eating at his place is the fact that he's been considered one of the top pastry chefs in the country. He turned down executive pastry chef positions at Per Se and Alinea.

It's not about portion as much it is about sheer work and dedication concentrated on one plate of food.
Intensity, diversity of components and flavors.
It's not like it's superior to gorging on large portions, it's just a different way of appreciating food.

It's a french vietnamese spot, so for the main food i had the white papaya salad to start, beef tar tar, lettuce wraps with chicken meatballs, and just ordered alot of the deserts off the menu:

Basically a vanilla custard with crunchy chocolate and coffee cookies with coffee ice cream.

Lemon pot de creme with sweet potato sorbet

Bitter chocolate ice cream with roasted parsnips, brown butter syrup, toasted oats, roasted pear.
The pictures are from kevineats blog, but they're the exact same plates i ordered.

It was a rendition of it, but strangely enough, the SAME desert also won "Best Dish" at the Star Chef gala, beating out restaurant chefs from Bouchon, Animal, Langham, Rivera, and a bunch of other highly renowned restaurants.
It's the reason that when Jordan saw the food critic again (Irene Virbila), he told her and her party to get the fuck out of his restaurant.

Very nice. Although visually impressive that plating style is not unique and not his own.
Michel Bras is the godfather of "landscape" plating, his style was then emulated heavily at El Bulli, then everywhere else from there.
they look very good, but how did they taste? as good as they looked or no?

oh i totally agree with what you're saying. He does the whole Noma thing a bit in his savory courses.
But for me personally, it was a unique dining experience to eat at a place where plating was as elaborate as this.
He topped alot of the main dishes with micro greens and just really beautiful baby herb sprouts and baby root vegetables. It was nice just to see this new trend in cooking for me, showing off produce.
As for his deserts, his flavors are surprisingly tame and linear. Nothing too crazy. He matches coffee ice cream with chocolate baked crust, vanilla custard.
Or the Kampfir lime, basically made in a custard tart form, mint syrup, fresh leafs of mint.
Very straightforward stuff. Maybe some slight twists and accents here and there but he keeps it approachable and familiar.
He mixes up textures pretty well, always has something crunchy with something soft. Baked cookie crusts with custard, miniature vanilla macaroons for his lemon pott de creme.
My main impression of him is that he's a very thoughtful chef. Even during our conversation, he kept asking me over and over again "how's the desert?" like obsessively.

I did a job in atlanta in december and while I was there decided to try a few of the upscale restaurants owned by a guy that had a bar/grill that had fantastic food, one was a latin/mexican fusion place and the other was supposed to be brazilian steakhouse. somehow both places were getting great reviews for bland food, it was absolutely flavorless, other than some blue corn chips that tasted a little burnt, I'm assuming the chef was so new to cooking that he had no clue what seasoning was, not even salt I think they must have been spice pussies 
what's sad is that even though we knew the owner, frequented his previous establishment, we still couldnt get him to the table just to say hi much less ask him what happened to the quality of the food

Next time you're in Atlanta, you may want to consider hitting up a restaurant by Richard Blais.
He's really been making a name for himself. Supposed to be really bold flavored food.
