Enoki trouble

So I visited a mushroom show put on by our local mycological society and picked up an enokitake grow kit. I've never actually used a kit before, but I figured it has to be easier than starting from spores right? Well I followed the included instructions exactly and 3 weeks later and not a single sign of pinning on my lump of mycelium. I'm storing it at 50-60 degrees F. Any ideas?

Is it a big block? Pics would help.
When I grew Enoki, I had large filter patch bags with hardwood sawdust, gypsum and wheat bran. Waited till they were nice and colonized, cold shocked for a week in the fridge, and they fruited like this:
 
Try a cold 24 hour dunk. I like to take the shelves out of the fridge and put the dunk-bucket in there.

Ya, it's just a block of woodchips and other substrate that had been previously inoculated and put in a bag. All I had to do was cut the bag and mist it. But actually just today I found the first couple pins, so I guess it just took awhile longer than usual. I appreciate the help though! Mushroom growing has indeed become a passion of mine and I love that feeling when I see the first pins erupting through the mycelium! Although using the grow kit does take a bit of the satisfaction away..

Nice, ya Im about to fruit 4 bags of Enoki in my greenhouse. They are in the fridge for now but im waiting until my pink oysters finish so I can lower the temps.
Just out of curiosity, how white is the block you are fruiting? Like can you still see a lot of brown from the sawdust/sub, or is it all completely white?
edit: I was gonna say that when Enoki pins it looks like sandpaper, that develops into little fish-egg looking clusters that stretch out. Have fun!

My block is completely white, almost no signs of brown underneath.
