Cracked corn contamination?

I did 4 cracked corn jars with BHT LC i cant tell if its the coloring of the corn (being that it gets darker towards the cob in some spots) or black mold creepin in my jars. WTF i pressure cooked em and and was sterile all the way! Any ideas???

I'm not very experienced because as of now i haven't even got a fully colonized jar.
Someone suggested to me there might be endospores that corn harbors. Did you soak the corn for 12 hours before PCing it?

Yea i did the 12 hour soak damn that's four pints down the drain...the only thing i can think of is the injection its self. that's the only time it was exposed without both layers of foil. no matter i have plenty of brf cakes going as well i need a better grain tho. I'm thinking rye berries next time I've herd they work the best. thanks for the feedback

LC from spores is always a gamble. Your spores aren't clean enough for that.

i use popcorn religiously and soak for at least 24 hours to endospore it ... then boil for an hour ... cracked corn is somewhat alien to me but i would think you would have to boil that as well for at least a percentage of what it takes popcorn ... insufficient hydration can keep certain kernels from receiving the full strength of the pc's temperatures ... allowing contaminates to remain unscathed ...
also as above , spores to lc is pretty iffy unless youre damn sure you got a clean print ... which when considering the printing process is never 'completely' sterile is pretty hard to do !

Jimmy cracks corn not you, use rye it's the best grain according to RR and is cheap and easy to find, check health food stores and farmer markets be sure it's organic from what I understand. I userye and lc and it colonized the entire jar in two weeks, just keep at it because failure often leads to success, good luck

also from the looks of it the contaminate is resting along the edges of your grains ... which to me signals a wet rot type of contamination , caused by not drying off your corn sufficiently before pressure cooking it ...

Corn is tough but cheap to work with.
Soak and boil. I use cracked and cook the cracked until the starch/slime rises, the dump in the colander and let drain about a half hour. Not too wet/Not too dry.
Popcorn just soaked and 10 minute boiled / drained
I even put the verm in boiling water for 10 minutes and sqeeze it out when it cools - but I have huge bags of verm that can sit out here for months andpick up stuff from the air.
This is a ass pain kind of - but when I want 100% success with corn and no time to waste I fractional sterilize. Longer process but with cracked corn
Just don't PC on high and overcook/burn when you are going to do it the 3 day way.

sugar based lc are not the best in my opinion. why did you decide to do that?
and why corn?
and did you even test the lc to see if its clean?

I used Karo. It seemed the easiest to acquire. I used the LC a week prior to inoculating the corn on some brf and verm. worked great no contams at all. they're almost to full colonization at this point. The corn was free and in abundance i read up on it and decided to give it a shot.

well karo is a sugar based lc....
anyways your corn was probly too wet. or something.
well im positive it was too wet. you still have the foil on it.
how are you providing gas exchange to your jars??

There is micro pore tape over the injection holes and the top layer of foil is lose. It could be too wet. I towel dried it after the soak. must not have been good enough...What LC mixture do you recommend rather than sugar? I haven't been able to find agar
