Edible Hunt - Two Boletes and Marasmius oreades.

Not sure which if either of these Boletes is edible. The red one stains blue very heavily. Would also like confirmation on the M. oreades though I'm pretty confident on that one.

Yes on M. oreades. The "soldier's helmet" type shape is typical of them.

You are making a very good point there. Some don't, but the overwhelming majority that I find do and I eat all of them (except, of course, Boletus satanas) and haven't gotten the shits or felt sick from it in the past 35 years ever. I think the whole negative hype about not eating bluing boletes - or at least regarding bluing in a bolete as a reason to not eat it - is getting a bit old. Like I said, besides B. satanas I eat each and every bolete I find and by the pounds at that and none ever made me sick.
Maybe they would make my brother-in-law sick, but that's a guy who also has an imagined lactose and gluten intolerance. You know what I am saying?

I would only assume that some of the reports about boletes making you sick, i'd bet money, that most of them didn't cook them well. Boletes must be cooked thoroughly. On my last post, the two boletes I found, I found growing under a park bench. Lucky find=D

oh hell yeah Kahuna,I also found a bunch of Big Boletes yesterday as well,and now I wish I would have brought them home.I ate a lot of them in Florida,and never once got sick,and they all bruised blue.I guess I'll start eating the ones I find now that I know they wont kill me:grin:

So how do you cook a bolete? I seem to find them all the time, but never considered eating them. Do they cook up blue? Curious, as I am new to the game, but am interested in edibles as much as actives. Another question is, do you guys typically eat your edibles (any) the same day or do you dry them for later use?

I cut mine into thin strips,then saute them in margarine,and they taste really meaty,and delicious:grin:

Here in the czech republic, many people make rue soups with them, or pickle them. I havn't tried frying them yet, i'll try that with some breakfast sometime=D

I don't like the Eastern European/ Russian way of pickling mushrooms. The ones I don't use fresh I cut into slices and dry them until cracker dry. Then I make a "dried wild mushroom mix" out of it. You know, the kind they make you pay 5 bucks for an ounce at the supermarket. By the end of the season I usually have several large jars full of dried mushrooms for all my off-season saucy needs. The only ones I seperate from the bolete mix is Boletus edulis for which I have separate jars. After all they are called King Boletes and the king doesn't hang with the peasants.

Drying requires equipment or effort. We're lazy and just freeze what we won't use immediately, and make soups over the winter=P Europe, as I have come to find, is HUGE on soups. Soups with almost every meal.

Yeah, I am a soup fiend, but since freezing fresh mushrooms will expand the water they contain and thus break their cell walls I'd never do that. That makes mushrooms gooey. Drying them preserves the best of their flavor and when you rehydrate them they will be chewy and tasty. And all you need is not  a lot of equipment, but merely a knife, a string and a well ventilated space.
