I was wondering, with out getting to immaculate, what is a good way to cook these guys, simply?  A little salt, pepper, and butter in the frying pan?

I like to saute oysters in a mix of butter and olive oil, and then add them to my spaghetti sauce.  Cut the stems off and only eat the caps.  The stems are tough and nasty.

I like to cook them the way RR described, but I coat them with ranch dressing first. Very good.

Thanks you guys.  Think I'll have them for breakfast fried in a little bit of butter, salt, and pepper, see how I like them. 

How are they raw?  I don't like the smell.

You should never eat any mushroom raw.  The human body doesn't have the digestive enzymes to break down raw mushrooms.  You only get the food value if you cook them.  Elm oysters are my least favorite.  They have an 'off' taste I just can't get used to unless they're in a well-seasoned sauce.

I can see why they would be your least favorite mushroom.

take some flour
mix some seasoning salt in it (for frys)
then make some batter out of pancake mix

but the mushrooms in the flour then batter and deep fry

if you like a crunch roll it in crushed ritz crackers
we did this with onoins and it tasted like a&w onion rings

i did this with oysters last night
it was ballin

fresh oyster normally taste relatively bad compared to when cooked.

I didn't eat them "fresh".  I did the whole butter, salt, and pepper , in a frying pan thing.  I was advised above not to eat them raw so I didn't.  Sorry, I wasn't more clear.

Really? I thought they were pretty good when I had my harvest of elm's last week. I coated them in ranch, and fried them in oil/butter with a little salt, cooked on med-hi heat. After the water boils out, they will start to brown, as soon as they start sticking to the pan is when I call them done.

As jokefox mentioned deep frying oysters is even better. Yum.

Really? I find Hypsizygus ulmarius to be superior to Oyster Mushrooms. I've never found them to have an odd taste that some have described here. Perhaps their flavor varies regionally, but here unless really old they are firm, have a superior texture(even the stems) and a meaty flavor. Nothing off putting about them at all.

I just cooked up some fresh oysters.  Slicked them thick, threw them in a bowl with a tiny bit of oil and some Bragg's Liquid Aminos/soy sauce.  Threw in some pepper and some basil and a pepper from my garden and stirred everything up so everything was mixed.  Threw them in the oven on 375 or so until they browned up and dried out a bit.  They are so tasty this is gonna be my new go to for oysters.
