Mango Salsa + Baked Fish

Here is something I actually just got done eating, I don't know about you guys but I like to use veggies from my garden so that's how I made mine.

Krank'z Mango Salsa:
1 ripe mango
1 onion
1 lime (squeezed)
Fresh cilantro
Jalapeno peppers
Pinch of salt
Pinch of pepper
Pinch of cumin

Preparing the mango salsa is pretty easy, just slice and dice everything. Amounts may vary depending on how many you are serving. BUT, for my peppers, I slice them all up and put them in a Tupperware container and fill it to the top with olive oil. Then I let the peppers soak in there and along with cutting up a few of them for the salsa, I pour some of that spicy oil right in the mix. When you are done with the salsa, mix it gently with a spoon, cover it airtight and throw it in the fridge.

Now, you can either munch on this stuff with some lime tortilla chips and a ice cold Corona, or put it on some fish.

If you want to try this on some fish, what I did was breaded some up and got it nice and crispy in the stove. I didn't do much to the fish since the salsa is so flavorful but a pinch of salt and pepper did the trick. I usually don't like breaded crunchy fish but the texture along with the soft mango is fantastic.

This isn't something crazy and new but its awesome for a hot summer day like today here in North East Ohio. Enjoy!
