I love king of the hill.
I remember a time when I didn't love it. I was a little kid then I thought it was very unfunny compared to the simpsons or family guy.
Now, while I do not think KotH is better than the simpsons(when the simpsons was in its prime), I think it is probably the best adult animated comedy on television.
Unlike South Park, which I also find very funny, the humor is not blatant and in your face.
The characters themselves are funny. Look at Hank Hill, he's this morally straight upstanding American man. Ronald Reagan is his hero!!! How is that not hilarious?
Bobby. Bobby is funny because he is everything that Hank is not. Here you have Hank Hill, this pseudo-masculine, straight-laced, working class American man who loves his truck and his perfect lawn. Yet his son is a fat oafish clown who sucks at sports but loves to make jokes and poke fun at everything. At the same time, Bobby, like his father, really isn't the sharpest tack in the shed. Yet although Bobby is not a very intelligent character he's so goddamn lovable and funny. The dichotomy and interaction between Hank and Bobby is super fucking funny.
Case in point, in one episode Bobby is watching a workout a video on television (after all, the kid is pretty fat and he's trying to get in shape, god bless him) but the exercise is a butt exercise. Bobby is laying on the ground but lifting his ass up in the air only to squeeze it together, and his father walks in and is just appalled at this behavior. Again, I don't see how this is not super funny.
And Peggy. Peggy is funny because she is just like Hank except in female form. She tries to be the best fucking mom she can be, but in the process is super corny. She's a substitute spanish teacher but speaks horrible spanish (that in itself is pretty funny imo). She takes the side of Bobby a lot but is still devoted to Hank. You can tell she is slightly upset with how her life turned out but by and large a happy woman. Typical mom sort of, yet neurotic. She is obsessed at being better than everyone, while in reality she's just as shitty and in most cases much more boring than anyone else on the show. How is that not funny?
These are just the 3 main Hill family characters. I could go on and on with the other characters but I won't.
Point is, King of the Hill is a character driven show, just like an Ernest Hemmingway novel is a character driven story.
It isn't about what happens to the characters but how they respond to what happens. And usually, in king of the hill, the characters respond in a neurotic or very specific way. I find this hilarious and it seems like a lot of other people do too.
I think a lot of people can relate to King of the hill. I'm not from the south, I'm from Kansas City (so kind of south compared to a lot of people I guess). But I know people like on king of the hill. I'm an only child, and my dad is like a more successful, angry, and educated Hank, a little fatter too. My mom is kind of like peggy but has no job and just doesn't do a whole lot but she's a great lady and makes people happy.
I've had various bosses and people I've met in my life that remind me so much of characters on King of the Hill. The show mimics real life, but does it in a funny way. It points out the absurdities that most people, in day to day life, do not think are funny.
Nobody on King of the hill thinks that they lead a funny life or get involved in very funny situations (except for maybe bobby sometimes), yet what happens to them (like all people from all walks of life) is truly hilarious.
What you have in King of the Hill is a lot of characters very very strongly concerned with protecting their own ego (i.e. Hank Hill, Laosian neighbor Kahn Suponisinpon). I think for that reason alone many here find it funny, because when one uses psychedelics it allows one to make fun of and ridicule one's own ego and the various roles that one assumes day to day.
Anyway I'm done rambling but I hope my explanation was sufficient to those who say they do not find King of The Hill funny. You may not like it, that's fine, but for some reason I really want you to know why I think it's funny.

lol that one episode was on tonight where peggy finds out dale's wife (forget her name) was screening her calls, and then she sneaks into her house to spy on her to find out why she's screening her calls, and ends up hiding in her closet and when she's discovered she completely changes the subject and leaves hahaha

Halo kinda hit the nail on the head, the show is all about the characters. The show is only mildly funny if you're not familiar with the characters.
That said, with a familiarity of the characters' personalities and motivations, it's possibly the funniest show on TV. The real comedy comes from the interactions. A lot of the humor is actually unspoken, stuff that wouldn't even look or sound like a joke unless you knew some already-established backstory.
For example, there are a lot of digs at how Dale, in spite of his rampant paranoia, has a tragically misplaced faith in his wife and friends - his friend John Redcorn is sleeping with his wife throughout the series and has borne him a red-skinned son whom Dale cares for and mysteriously trusts to be his own. It's a running gag where their relationship is repeatedly exposed in completely unambiguous terms and yet Dale will always provide himself with some charmingly innocent reason to believe they were in bed together for platonic reasons.
I loved it when he had that vision: "I see the Indian... he's doing something... he's having sex with my wife! I understand it now, I know what it means! I'M A NATIVE AMERICAN!"
And of course Hank's whole character just gets funnier to me with every time I hear him say "I tell ya what." 
I believe the show was canceled a year or so ago at season 13. It's a shame to see it go, but by the same token I'm glad: too much longer and it would have turned to unbelievable shit, like the Simpsons, and anyway how many shows on American TV as clever and nuanced as KOTH get thirteen seasons?

King of the Hill is hilarious on so many levels.
I can see how some people can't understand the humor, though.

they were brilliant.

Family Guy is terrible. The thing I hate about it the most is that I'll still actually watch it and laugh at it. It was little better than trash when it started but now the word "trash" almost gives it too much credit.

you know how you can keep saying family guy lines now adays and it's like OH HAR HAR... well you could do that with the simpsons as well... but with the old simpsons episodes you still couldn't even do a joke justice by portraying it... cause it would so complex and have many other levels and jokes around it...

that new show Ugly Americans is pretty good. only really watched one episode of it though..
i thought KOTH was supposed to come back for another season?

same here... i only watched one half of an episode... but it just wasn't time for the tube, so only saw a bit.
it as actually not horrifying endless non-sequiturs anymore
