Winter Gardening

I know I could probably just search all for all of this information but I like writing to you people a lot.
I am living in Southern Indiana, and the winter seems like it will end sooner than later.
I want to start growing some greens like kale, or anything else that you could recommend for the winter to harvest to late spring, or whatever Id be happy leaving things in the ground for my Uncle who lives here.
I have experience biodynamic methods but no preliminary knowledge of starting beds or germinating and starting things out.
So I found out its too late to start garlic, and its a good time to start greens.
There is a HUGE spectrum of sunlight because I'm by surrounded by woods kinda, but I have full southern exposure opened which I think? is the best.
Its important that I start soon because I think that I am leaving town in May.
Kale? Chard? Lettuce? Arugula? Greens? Nestershums? Fennel?

Radishes, beetroot, silverbeet and spinach, chinese cabbage, snowpeas ect will all grow in the seasons you are talking about (not knowing your temperature ranges).
Carrotts are a great thing to grow, they taste outa this world compared to store bought

I recently bought some purple carrot seeds. Ironically they are neon green. Suppose to be very sweet.
I basically just planted my whole garden the other day. CANT WAIT for sprouts!! 
Try some peppers man. Green, banana, etc. Take pics too!

"winter gardening" generally means planting things in summer/early fall and keeping them alive/harvesting throughout winter.
unless you have a heated greenhouse with supplemental light the most you can do is keep things alive. Vegetables tend not to grow in winter.
Luckily, spring is coming soon, so now is a good time to start your transplants. You say you're leaving town in may... what is the average last frost in your area? In the northern PNW our last frost is late april. Meaning most plants shouldnt go outside until that time or slightly sooner depending on variety.
As far as things that you could plant soon and harvest by may.....
radishes are your best bet.
Kale will work depending on when your area warms up.
lettuces and asian greens.
