Preserving chanterelles?

Where I live a lot of cinnabar chanterelles grow in the woods. They're delicious, and since they grow in abundance I was toying with the idea of picking 'em and selling or giving them out at the farmers market. I've read that drying chanterelles doesn't work that well. Is there anyway I can store them and keep them from drying up, or should I just continue to enjoy them in nature and only pick enough for myself?

I read somewhere a good way to preserve edibles is to slice them, dry sauttee them, then freeze them.  You might try that.
Dry sauttee intensifies the flavor a lot in my experience, but i never tried it on chanterelle.

Cantharellus cinnabarinus mushrooms are tiny!  I just picked a few yesterday and put them in a quiche.  (Ooh la la.)  Man, it's weird finding these in December.  El Niño year, I guess.



To preserve them, put them in a dry, nonstick pan with a pinch of salt and sautee until they give up their water and turn limp and lifeless.  Squeeze the moisture out into a glass, and add a shot of jaegermeister to make a refreshing cocktail, then blot the mushrooms dry with a tea towel, lay them out on a cookie sheet and put them in the freezer.  Once frozen put in a ziptop baggie and consume within six months, preferrably less.

Alternatively, you could put them in a jar with some water and can them in a PC, if you have one.  They'll probably turn to mush, though.

the saute method is the best i have found also.

What a brilliant orange color!  Great find.  I had no idea these grew in TX at anytime of the year.

Thanks for the help! I really appreciate it. I can't wait till they start growing again down here. I play disc golf, and the course by my house is just covered with 'em... One of the tees was completely surrounded by masses of them!

I've only ever found them in December/January, but perhaps more toward the coast than you might be. I seem to have the best luck with mixed pine and oak habitats with sandy soil. And while they are fairly tiny, they are super abundant and easy to spot; following the flow of water seems to work well for finding more patches.

Am I alone in thinking that C. cinnabarinus has a spicy taste sometimes?

SF Bay area chanterelle season is November - January, from what I remember.  I went out hunting with Mr. Rockefeller last January, but he only found one due to the dry weather.  (We did find a HUGE oyster tree!)

Around here cinnabar chanterelles can come up in the winter.  I wish I could identify the trees they were growing under.  The trees themselves were really small understory types with somewhat narrow leaves, definitely not oaks or pines noted in my field guide.
