Wild Mead..complete!

It's damn tasty! I feel that it could have been fermented even longer. I was really confused on fermenting times I read, but I figure the best time is what realize through experience.
-The alcohol burning seemed to lessen after I refrigerated it for a night...any idea why?
-Can I use the lees at the bottom to make another batch. In other words is the sediment at the bottom of the jar I siphoned from a yeast that I helped cultivate? Is it dead now? I left some of the mead in there to keep it alive.

Hmmm, that sounds good. Never heard of mint in mead. I don't like sweet drinks, but mead just sounds so damn tasty.
I found your other thread about making it. That's awesome that it was a wild fermentation! Old school.

a hydrometer is a great investment for deciding when fermentation is complete. you can get 1 for 10-15 bucks. i would go for the ones with the gravity and expected alc% all on the same deal. saves a little math.
my hats off to ya! i have always wanted to do a wild fermentaion. thats pretty inspiring.
i would think your yeast should be fine. i'd just add it to some sugar water and see if it takes off again. you got me realy wanting to try this, ima be thinkin about it all winter! damn you!

tain't hard at all my friend.. Mix in some honey with warm water. Let it sit somewhere accessible with a cloth over the top. Stir it when ever you think about it with a wooden spoon. After stirring leave it on top of the jar. It gathers wild yeasts as well. and then store it more..every time you think about it. To my surprise it was actually fermenting after 4 or 5 days
This next time around I want to try and flavor it after the fermentation just to see. Don't think about it man...do it!
