PF cakes losing color?

Ok, I don't think any pics are needed for this one, it is pretty straight forward... I pressure cook PF cakes all the time, they always have that white-ish tan color to them from the combo of verm and brf.... I pressure cooked some cakes recently and they went in white-ish tan, and I pulled them out and they looked like straight verm.... Why is it losing color and is this a bad thing? I don't think that they got flushed out by the water, the water in the PC didn't smell like brf, and the jars don't look over saturated. BTW- the jar info- The jars are 1/2 pint wide mouth jars that are used for pf tek all the time, and there are 4 holes in the lid that are covered in micropore tape. What is going on??

As long as the moisture is good, don't worry about what color it is, (until later on when discolored means contaminated).

is your steak still bloody red raw after you cook it? (not a great analogy but it gets the point across.)
you just sterilized your substrate at 250F for 60min + it got cooked. nice and golden brown.
let it cool and inoculate so your spores can germinate and the myc can eat.
