Quickly pinning jars not fully colonized, what to do?

Hey there, first time grower here.

The jars started pinning even though there was a penny sized spot left un colonized, a friend told me to let them fully colonize before birthing them so I have been waiting. But the pins are starting to get very big now and theres still a tiny spot left uncolonized, I was wondering if it would be better to continue to wait it out or birth them now.

And if I should birth them now, should I still dunk them for the first flush even though they are starting to grow? Here is a picture for better reference, the two jars that are pinning are on about the same level and the other two have no pins. The little spot is pointed out, it was actually bigger this morning so I'm assuming its growing fast.

If it was me, I'd birth them, cut or wash away the uncolonized part, then dunk and roll as normal.
Pick the ones that are too big to survive the dunk and roll, leave all the pins you can.

I have never done the dunk and roll before, whats a good estimate size for a pin being too big for a dunk?

It's fully colonized or it wouldn't be pinning. 

Remember, if there's a contaminant such as bacteria, the mycelium runs up against it as a natural barrier, just as if it were the glass edge of the jar. Therefore, full colonization means full colonization of the available substrate.

Don't remove the pins before soaking.  If they abort later, pull them off at that time.

Next time, remove the foil after the sterilization process.  Its only purpose is to keep water from splashing over the top of the jar and getting inside via the holes in the lid.

Alright, I took em out and washed off some of the extra substrate. They are being dunked right now. The foil is actually serving as the lids (went with the ghetto set up). Quite excited and nervous, I really hope these guys grow ok :]

Cibo I hope you dont mind if I ask a question of my own. I have a similar problem. I have the exact same thing going on in 2 of my cakes but HALF the cake is uncolonized and the pins seem to be about the same size. I simply used drinking glasses with tinfoil covering the top(ghetto aswell). Is this happening because there isnt enough gas exchange? Also should I cut the uncolonized half off and still use it?

Ok, I have one more quick noob question. As I'm going with a pretty ghetto setup, I have a plastic bucket that I cleaned and put a few holes in as a fruiting chamber with a plastic bag on top. I put about 2 inches of wet perlite on the bottom and two cakes are in there now. I don't have a humidity gauge, so was wondering if there was a simple way to estimate  the level of humidity to make sure it is correct for the fungi?

I have noticed that tends to happen with using that method.

I use drinking glasses with foil lids, they always fully colinise but usualy pin within a few days of full colinisation. I put this down the the foil lids allow to much air exchange since they dont seel around the edges of the jar.

If your susbstrates pinning before full colinisatoin, it usually means it cant colinise the rest of the substrate and that signals full colinisation. either that part of the substrate dried out, compressed or is contaminated.

recently i have used micropore tape to seel the foil to the jar to see if that fixes the problem.

I'd recomend gettng proper jars. I know its hard for some to find canning jars, luckily i found somewhere that sells suitable jars the other day.

I'm thinking they pinned to early due to drying out as these cakes took a looooong time to colonize.

But as it's already done I'm more curious as to how to know when the humidity level is good without a meter?

pit a bottle cap of dry salt in the chamber..
check it the next day, if the salt is damp then the himidity is over 75%
