Refrigerating / Grinding mushrooms
    #10719315 - 07/22/09 05:58 AM (2 years, 9 months ago)

Can I refrigerate fungus?
Do mushrooms lose potency when ground?
Can fungus, once ground, be refrigerated?

Thanks all!

Sure, but it generally doesn't last as long as refrigerated store bought mushrooms due to their procedures involving a special cooling technique or something...

Only compared to fresh, as fresh potency beats dried, but if you plan to store it, it must be dried (or some preserve it, but that is more hassle in my opinion) and once dried one is free to grind it without further loss in potency if stored properly.

You can even freeze it once dried, ground or not, but yes you can refrigerate it. Te best method is to put an oxygen absorber with a moisture absorber in a mason jar and place that in the fridge/freezer along with your mushrooms. Don't let them touch either though, wrap the oxygen absorber and moisture absorber in paper towel or something.

Another method which I do which may or may not be better, is to do all that above, but vacuum seal the mushrooms then put them in glass.
