The Most Improperly Prepared Foods

Rice Fish (especially Salmon and Halibut) Shrimp(especially @ Benihana) Vegetables(especially asparagus) Chicken Breast Lamb Loin Pork Duck Breast Risotto Most any pasta dish Most fried foods (dirty oil, too low or too high cook temp) Anything "Fusion" Thai Food(most places water it down too much) Chinese Food Pho(not enough bones used to make stock,flavorless, no tendon) Polenta Cold foods are usually not served as cold as hot foods are served hot Homemade Ice cream (too much overrun, grainy, no intensity) Puff Pastry (especially when used in savory food like wellingtons, tarts, etc. Almost always served raw or part raw)
Usually the more simple the item the more it pisses you off that it isn't right. Rice is on the top of my list after having gone through years of culinary schooling where no one knew how to make a proper pot of rice. Shocking.

I agree with you about Chinese food, Ive entirely stopped eating at Chinese Restaurants except in certain areas of town (I'm from LA). My brother used to live in DC, there is a great ice cream place in Dupont Circle though I forget the name. In fact I was there a few weeks ago, had a Jack Daniels and Chocolate flavored ice cream.
As far as choosing a restaurant goes, its really between Rathbuns again which I thought was great, Restaurant Eugene, Bacchanalia (which seems overrated) or Joel. I'm just skeptical of this new chef at Joel as Ive read some disheartening things. Anyways thanks for the help, I know I'm fairly anal.

The Chef @ Joel has been working with Antunes for 14 years and was the chef de cuisine @ Joel when it opened. I'm pretty sure he sticks with the classics that have put that place on the map.

Alright alright I hear ya. Ill hit it up with the ol family, Ive been getting some grumblings about the choice of restaurants though. They seem to want to go to Bones which is a steakhouse, however Ill prevail don't you worry. I also plan on stopping by some of my old bbq haunts, and trying out Richard's (from Top Chef) burger bar.

Rice is cooked in proportion of 1 to 2 (1 cup of rice to 2 cups of water), am i right?

it's funny cuz even on Top Chef people have fucked up rice multiple times.
I'm incredibly picky with my rice in terms of texture, like my mouth can pretty easily detect the slightest imperfections with rice cooking.
When i cook it myself, i use an age old korean techinique that really seems to never fail. After rinsing down the rice I basically let it sit in the cooking water for atleast 25 minutes before actually beginning to steam it.
For some reason it consistenly results in the optimal texture.
I was watching Paula Dean yesterday and she was talking about how rice should always be cooked with salted water
i wanted to punch the screen.

Usually, this is the ratio, however all rice have different liquid absorbtion rates, and even within the same rice type the harvest date also plays an important part in determining how much water it will eventually absorb.
This is why it's so wrong most of the time because people make it thinking there is a universal way for all types of rice.

Theres a good restaurant called Pho' Hoa that is pretty much all over the west coast, for a multiple location restaurant they actually make some of the best Pho ive ever had. alternatively there will be a little vietnamese place here or there that serves good Pho.
But I agree, not enough bones used in the stock, and everyone makes their basic Pho' stock different, lately ive been noticing things at different places that range from Cloves or Allspice, or even Licorice, to a pile of raw brisket on the surface. Mmmm raw brisket

The cooking method also determines this.
When I pressure cook rice I use 1:1, but when I boil it I use 2:1

yeah, boiled on the stovetop. I use brown basmati. Also the same ratio for brown jasmine.

Cuz thats the way it says to do it on the container. It always comes out nice and fluffy, since i cook it on low for an hour. It just with brown rice that the ratio's are like that.

oh, c'mon now...
what, you havn't had an overcooked steak or parker house rolls that are hard, stale and cold?
I'm just trying to make the point that with all of the restaurants currently saturating the market, you would think at least one chef/restauranteur with be absolutely content with just doing good basic food, instead of trying to emulate a style or cuisine that is either way over their heads or isn't prepared authentically or properly.
and I usually don't send anything back unless it is a particularly nasty offense (strands of steel wool) even a hair strand won't bother me; not as much as sending out cold food. I will refuse to pay for something if I don't think it was worth my money.
