Jalapeno Wine

Well with the push from a friend, I've finally decided to get this stuff going!

I started out yesterday with 16 jalapinos and about a pound of raisins. I cut and seeded all but one of the jalapinos (didn't want to make it TOO hot!) then blended them up with some water and the raisins. I then put the whole mess in my primary, along with about 2 pounds of sugar and enough water to make a gallon. Into this I added about 3/4 tsp yeast nutrient as well as a crushed campden tablet.

Then I let it sit overnight, and added about 1/2 tsp of pectic enzyme...which brings us to where I am now! I'm going to let it sit for about 12 hours before I add the yeast (using champagne yeast).

Here's what it looks like so far...

Wow!  I've fermented a lot of things, but never hot peppers.  Let us know how it turns out.  If nasty, you can always distill it and use it for bloody marys.

It's supposed to be really good for cooking with! Does something "indescribable" to spaghetti sauce.

My friend just wants it to drink! Supposed to warm you up on a cold winter day :wink:

Smells like sweet peppers. Me and a friend tried a little bit of the must before I put the yeast in...and it was quite good! The raisins hadn't done much by this point, but you could really taste the peppers and it had a great level of heat!

Day 3-5: stirred must daily

Wait you open every day and check whats going on? I mean removing the lead? :O you better dont do it, this causes oxidationg and in result you will have sour taste...

I am supposed to remove the lid and stir the must for the first 7 days, then I will be putting it into secondary and slapping an airlock on it.

Besides...the must is in a large bucket with about 4 gallons of head space. You know that CO2 is heavier than air? I doubt if just removing the lid causes much oxygen to get down to the must...and stirring probably only accounts for a little.

Even if it did, the oxygen would be displaced almost immediately by the CO2 being produced.

Day 8: transferred into secondary...tested the SG and it is at about 1.000 so I think fermentation is just about done! Took a little taste and WOW! Quite good and quite hot! Actually it's a lot hotter than before fermentation.

exchange the jalepenos for habaneros and distill it when done and ill bet that would make excellent pepper spray.  habanero brandy lol.

If jalepenos do that to you/anyone you know, laugh at them for me...
even serranos are hotter, and they suck.

I eat 1+ jalapenos everyday and about 1+ habanero a week/month, after a few days it just stops burning and tastes like peppers, it has amazing health benefits for your body.

I doubt jalapeno wine would be harsh at all, the brewing process itself would probably take the edge off some of the burn.
I've made some intense brews before using cayenne as a spice in cider and it does feel warming, im curious to see how jalapeno turns out.
