So, I'm in an odd spot. I'm a vegetarian now - not because I care a lot about animals or anything, but because my body can't process meat anymore. I ate tons of tofu and no meat for about half a year because I can get tofu for 2.00/3lbs at the chinese market, whereas 4$ will buy 1 lb of meat (on average). So, the economics just didn't work out.
Anyways, now I can't eat meat. Which works out because my girlfriend is a vegetarian as well. However, short of some f*cking expensive cookbooks, I'm not seeing a lot of good recipies out there that are really tastey.
What are your faves?

Theres loads dude.
Look out for soup recipes. Lentil, mushroom, minestroni...its a really healthy comfort food with nice bread. Stirfries are also awesome, stir through fresh lime juice, soy sauce and an egg to lightly fried veggies.
You can do a lot with roasted vegetables, just roast them in olive oil herbs and lots of garlic then you can eat them with rice, pasta, in quiches and pies.
Substitute meat with mushrooms in lots of recipes and that works. Look into lentils, chickpeas, pulses.
Here's a great recipe for bean chilli. The cumin and cinnamon work great together with the heat.
bag of dried "mixed exotic beans" - or whatever kind you want to use, kidneys etc 2 cans diced tomatoes 2 onions garlic small tin sweetcorn mushrooms carrots red wine paprika cumin cinnamon cayenne pepper small amount of stock salt n pepper grated cheese rice
Soak the beans over night. Start cooking the beans in the stock. Chop and fry the onions, then add chopped carrots and mushrooms. Add a lot of cumin, some paprika and cinnamon, and a nice amount of cayenne pepper and cook until veggies start to soften. Add the tomatoes and some tomato paste with a little sugar, and a good amount of red wine. Add a little water if the mix is too dry. If desired add more spices and the agrlic. When the beans are cooked, add them and the sweetcorn, and simmer for a while. Adjust wine and cayenne pepper, if its too hot add some sugar. Season. Simmer until its good and tasty. Serve on rice with grated cheese. Fucking aaaaay

6 zucchini squash sliced , half white onion sliced, 6-8 tomatoes sliced,2 cups macaroni"vegetarian"pepaired .half stick of butter or olive oil. basically put into pan with pot with 2 cups of water salt and lid. its awsome

Deep fried firm tofu with a simple soy dipping sauce (really the only way I can eat tofu and the only time I'll splurge on deep fried anything)
Roxanne Klein & Charlie Trotter's "RAW" can be had on Amazon for less than $7! a great source for raw food ideas, if that's your thing.

I had a whole vegetarian recipe book in my journal but I accidentally deleted it. I mostly make up my own things; pasta salads, stir fries, curries, soups and sandwhiches.
