Gah! They are everywhere! Is there anything I can do? My king oysters are pinning like crazy and a few are starting to mature, but these gnats are all over the blocks. Will the ruin my crop? I never had a problem with them indoors.

Oh no, they are just fine... if you like maggots in your mushrooms.

Find a some toads or frogs and keep them into the greenhouse.
Another solution can be to burn some sulfur in bar, but keep attention because it reaches very high temps and can burn instantly the greenhouse.
I suggest to burn it over a bin of water, so the little flam/drops won't damage anything. Fix it with a wire on the top of the water bin.
Once you fire it, simply close the greenhouse, and wait the fumes kill the gnats. If you run this method every week you won't have problems of gnats anymore.
I find locally the sulphur in the places that sell chemicals to work the wine. It's sold in long yellow bars.
I'd like to specify that i haven't tried this method because was born the idea after reading your post
However is a natural method used to sanitize the containers that keep the wine.
Let us know, Fabio

You can also try putting spirit vinegar out in bowls
It does seem to help reduce the problem
