Darker greyish mycelium after opening the jars

So these cakes stalled for a few days at 90%. I decided to open them to let a little fresh air in. Bad decision. They seem to have darker white/grey forming right after i opened them. As you can see the top half colonized nicely but then stalled, where the grey starts is where I opened them. What kind of mold is this? Are they usable or should I just toss them?

EDIT: When I say open, I mean crack them a little bit. Not actually take the lid off.
