I've made mead many times and I definitely like the bubbly more than the flat. There's on thing mead has in common though with my favorite kind of beer I like to make (lambic) which is it can take several months to even over a year to make a high end batch , so not for the impatient , but well worth the wait

I would beg to differ on the champagne yeast. Champagne yeast leaves things taste a lot like alcohol and not much like anything else if you let it ferment out all the way. Champagne yeasts have a typical attenuation of around 18% or so on average. They take forever as well and dont contribute much to the flavor on thier own.
For a nice middle sweet mead I would suggest lalven red wine yeast 71-b Or for something to ferment a bit faster try an Irish Ale yeast, they impart a smooth creamy hint to things.
for a middle of the road mead using wine yeast go with about 2.5-3.25 lbs of honey per gallon of water (check out the attenuation on your yeast to decide what would be appropriate to the amount of sweet you want) or for a desert mead go with 3.25-4. Anything much beyond 4 lbs per gallon of water is getting rediculous and would likely require something like champage yeast to make it palletable a couple of decades later.
A tip on the blackberries btw. Fruits often dont ferment out to taste like what they did before (especially strawberries) so if you want a nice strong blackberry flavor save some of your berries for after it has stopped fermenting and then add them. It may start to ferment again after you add them so wait before bottling to be safe but the flavor of blackberry will be much more evident. Also brew shops sell blackberry flavoring for that if you want to give it a bit more obvious tone.

I made blackberry mead. I used ale yeast because I did not want it extremely dry. I just finished it this week and drank some...it is hard core.

I made a mead many many years ago. I don't know even if I have any bottles left, but I used some Logan honey and wildflower honey that I purchased when I was in Asia. Just warmed up the honey jars under hot tap water. Only made about 3 gallons of must. Used some yeast nutrient and pitched about 3 packets of Lalvin ICV D-47. Fermented that thing completely dry, ended up being 0.97 FG. I want to say 10.5% ABV was the result. It wasn't very good because I didn't use any sort of acid to balance the flavor out and it was quite young.

I don't know how strong mine was as I didn't use a hydrometer on it, but 20 oz of it gave me a hell of a buzz.

I made this stuff once with little more than some honey, water, raisins, and some mason jars. Let the stuff sit for a few weeks and it got just a tinge of alcohol. Any idiot could make this stuff. It surprises the hell out of me more people aren't making it.

I am currently making a one gallon batch of elderberry/blueberry mead. The elderberries I picked last year and froze. I will be using about 3 lbs. of each adding 1/2 of them at the primary ferment then after things have slowed down quite a bit I will add the remainder to ensure the flavor is retained.
After racking several times to promote clearing I will add oak cubes to the carboy and let sit a few weeks. Elderberry mead was MADE for oak. It is wonderful with a rich purple color.
If anyone is interested NOW is the time of year to look for elderberries as they are fruiting in most parts of the country over the next few weeks. Free fruit is always a good thing!
