Has anyone worked for caterers or owned a catering business? I think I might want to start one in a few months and am just looking for general information and advice.
My plan (and its not really much of a plan right now) is to come up with several good entrees and a bunch of different sides and appetizers and letting people customize the menu.
I've never even worked for a caterer so I really don't know anything about how they are set up and operate.
What I would do is cook all the stuff in advance and then bring it to the event and heat it up.
Anyway, any responses would be appreciated.

It is not as easy as you would imagine, plus the kitchen has to be approved by the board of health, and you actually need to have the right equiment to be able to pull it off. In reallity i have rarely met anyone who is a full time caterer, most cater from their resturant.

if I was going to do that, I'd first work for a catering company. Often times hotels hold banquets, and working those can give one the experience needed.
I remember at my comapnies christmas party we were smoking out one of the servers with the catering company (although later he got in trouble), so you would be meeting some cool folks.

Yeah, try working for a caterer or a conference centre or something first.

I like catering way more than resturant work, it would be ideal to just cater all the time.
Oh & yeah, centrum, it is pretty much a given that food service folks are stoners.
