Prime Black Angus Beef Roast ~

One Black Angus top round roast, you can use top sirloin or rump roast, wouldn't matter really.
A handfull of carrots.
A red, green, yellow, and orange pepper.
A grip of celery stalks.
Two Vidalia onions.
One bottle of merlot for cooking, and another for enjoying.
Three russut potatoes.
Some sea salt.
Peppercorns.
Rubbed Sage, fresh thyme, some greek oreganol if you can get it, it has a more sweeter taste then domestic.
Two handfulls of baby spinach.
3 or 4 turkish bay leaves.
A stick of butter.
Lastly, some chives to finish it off.

Firstly, depending on how prepared you are, you'll want to jiccard the roast or stab it with a fork for awhile, then massage in some sea salt, thyme, sage and coursely ground peppercorns, if you want to be a real pimp, you can quickly toast the pepper in a skillet really quick, then mash them real thick with a spoon for a real rich pepper taste. get that going on, add a splash of olive oil on both sides, massage it all in real good, then put it on a plate and into the fridge.
Then the rest is real simple, all you need to do is get a cast iron crock pot, heat it up on the stove, get it real hot. Then add about a tablespoon of butter, add your roast, get a nice sear on the outside, then flip it, add your onions, carrots and celery. Then deglaze it with some merlot, add your spinach, and potatoes, peppers. Sweat all those things till they start looking happy, I'll add some more butter at this point, and just a bit more salt and pepper to taste. Then just top it off with water, to cover all the veggies. Pop it in the broiler at about 400º for about 45 minutes or so depending on size. Finish by adding a a touch of fresh thyme and chives, and maybe just a touch of pepper, very course of course. :tomato:

Everytime I try to do this, I get pepper EVERYWHERE. :crying:

Grinder's good enough for me (got three of 'em for two different course-ness variations + one for Grains of Paradise).

Nice, is the adjustable one electronic? Personally I love my pepper real course if its ben toasted otherwise, the corns can be real tough and could break a toof.

Well I don't have an adjustable pepper mill per se... however I can achieve a slight adjustment by leaving the top screw either tighter for finer grit, or looser for larger. Though if I leave the screw too loose, the darn thing eventually falls apart during use. What I meant was that I have one pepper mill that does a course grind, one for medium-fine, and a third for the grains of paradise. None of them are electronix.

That may be my problem. Whenever I've tried the spoon crush, I never toasted 'em first, and they would just pop or slide all over the place. I can see how a toasting might allow the internal oils to soften 'em up a bit for easier mashing.


Never tried Juniper berries to my recollection... will keep my eye out for 'em.

is it that really big pepper mill from the time i've visited you! time to get a new pepper mill!

go for peugeot...best brand for peppermills. i got a peugeot pepper and salt grinder set from the husband person for christmas and it is put to good use.

that or, if you want some roughly grounded pepper, i got a swedish pepper grinder for christmas made of cast iron that i can give you..sort of looks like a pot grinder
