My favorite spaghetti sauce....
    #4193546 - 05/18/05 11:29 PM (3 years, 6 months ago)

I love to cook. Chinese and Italian are my 2 favorite ethnic foods to cook. I have been making a spaghetti sauce for almost 20 years. I have never used a recipe....just made it by "feel". It has "evolved" into what I'm going to post today.

1-3tbsp olive oil
1 med onion
1 med bell pepper
1-2 cloves of garlic or garlic powder
2-3tsp Italian seasoning
2-4tsp oregano
4-6tsp basil
salt
2 cans (15oz) plain stewed tomato's
1 small can (6oz) tomato paste
1 can (20-24oz??) "Basil and Tomato" spaghetti sauce
1lb gr beef
sm-med box of (non-active)mushrooms :smirk:

Chop the onions, bell pepper and 1 clove of garlic up.
Saute them in 1-2tbsp olive oil till soft (8-10 min)

Add both cans of stewed tomato's, the tomato paste + 6oz water, 1tsp salt, and the Italian Sea.
Cover and bring to a boil

Turn down the heat to a low simmer (barely boiling) and let cook. Stir often, every 5-6 min. (chop the chunks of tomato's up when you stir it)

While the veggies simmer...brown the beef, and drain. Wash and chop up the mushrooms.

When the veggies have cooked down (20-40min), add the can of "Basil and Tomato" spaghetti sauce, the oregano and the basil. If you have another clove of garlic, crush it and put it in now. If not just add some garlic powder. (more salt too, if it needs it)

Let this cook for about 10-20 min before adding the beef and mushrooms.

Cook another 30-60 min.

*note* always taste the sauce as your cooking it. add more seasonings as you see fit. the measurements for the seasonings were approximations. the cooking times were approximations too *note*

Serve over spaghetti noodles with a good french bread and salad.

This is the one I use, I use it for everything that needs tomato sauce.

Olive Oil
2 15oz. cans of whole tomatoes
couple cloves of garlic finely minced
1 medium onion, 1/4 inch dice
1 shredded carrot
3 tablespoons chopped fresh thyme leaves, or 1 tablespoon dried

Soften the onions in some olive oil, then add the garlic, carrots, and thyme. Cook for a few minutes. Hand crush the whole tomatoes and dump the entire contents into the pot. Simmer for 30 minutes. I usually omit salt, because I don't know what I'll need the sauce for, and if it is with pasta, I cook the pasta in salted water, and use some of the pasta water in the sauce when I dress it.

if you're using canned tomato products,
add a very small pinch of sugar to
get rid of the metalic, acidic taste

well after the hurricanes, it was hard to find good tomatoes. not to mention most of the tomatoes that you get in the supermarket have been artificially ripened, so they're bland anyways. I just bought a couple cans of san marzano tomatoes. I hope they're good.

It only needs a very tiny amount, if you use too much it's gross.

I swear, sometimes I get really disgusted with beef. I love homemade spaghetti and meatballs but I got tired of the beef. I tried Italian sausage, it was ok but just not what I was looking for. Then I made my meatballs exactly the same as usual except I substituted ground chicken for beef and bang that did it. I think I will only use ground chicken from now on. You guys should try it, you might like it too. It's milder and tastier too.
