How should a good bottle of Chardonnay taste?
I just cracked open a bottle of 2005 Matanzas Creek Chardonnay.
Its sort of bitter at first taste but after you swallow that taste carry's over to almost a lightly sweet yet watery 'wine' taste.
not sure i like it or not......not sure i can really describe the taste properly either

The only way to know if it's good is too drink as much other wine as you can

well, im certainly not going to let this bottle go to waste just because it didnt live up to my taste expectation.

Its difficult to describe how wine should taste because there are people that do this for a living and I know there are specific words. The way you describe it "bitter at first then lightly sweet" sounds like most chardonnay I've tried.
Its just preference though. If its too overpowering at first, try and find a milder wine. I prefer riesling and other sweeter whites. What part of the country are you in? In my area (Oregon) there is some kick ass white wine.

well, it may have oxidized in the bottle due to a bad cork. The best way to check is to pour it into a decanter, or at the least a small pitcher. Hold it up to the light and swirl it, if it's brown or has a brownish tint, it's gone bad and you shouldn't drink it. The edges of the liquid as you swirl it will almost look like flat coke.

Im from ohio.
This wine was a gift.....along with a bottle of merlot.
Both are from the Matanzas Creek Winery of Sonoma Valley.....
I dont think i will ever go an buy any chardonnay, if this is pretty well what they are about.
any idea what some other good wines on the sweet side may be? Riesling, you say?

Try a riesling or a zinfandel. If those aren't sweet enough try a gewurztraminer, its a german wine similar to riesling but a little bit sweeter imo.

don't think it turned.
the corked end also had a seal over it.
the wine looks like light ginger ale that has gone flat sort of 
when wines oxidize, isn't that vinegar?

pretty much yah. There's another name for it but i can't recall. Sometimes the cork rots and it causes it to happen. if the cork falls apart easily when you uncork the bottle, it can be a bad sign. My father had this happen to him on sun when we went to pour the bottle for dinner.

I have always found Muscato(Moscato) to be on the sweet side.

You should never pass judgement on a type of wine after trying only one brand of it. There is shitloads of variation between brands and you need to try at least 3 probably 5 different kinds before you can really say that you know what that type is generally about.
I'm not a wine snob but I just think it'd be a shame to never want to buy a chardonnay again just cause you didn't like the first kind you ever tried.

Yeah don't be hesitant to try other chardonnays. I'm no wine snob either, but I dig it and know a fair amount about it. I've never heard of muscato though. How does that compare to the varieties already mentioned?

Most muscatos that I've had have been wet(not dry, not in a liquid sense), sweet, and have an almost fruity finish(aftertaste?). It's a very fragrant vino.
