    #8594943 - 07/04/08 01:30 PM (4 months, 27 days ago)

is it OK too dry sum of my chant finds out for later use i just have soooo many and dont want too waste them cuz they are all in just about perfect shape. I was wondering if these will be OK dry ive read they lose alot of there good texture when dry and sum people dont like them so i hope thats not the case.

Saute them in butter and then freeze them. Chanterelles store really well that way.

Tried chanterelles are not very good at all in my opinion.  Not like yummy dried morels or ceps.  Where are you finding them weillii (not specifically).  I'm in west cobb at the moment, and haven't found anything but a pretty spectacular Meripilus giganteus.  Last year I ate some, definitely a poor, poor replacement for a hen.  Ok taste, awful texture.

I can't wait to find some chants.  fucking drought.

I meant where are you finding those chants, Weilii.  Not where are you finding them weilii.  Speaking of which, just hit up a patch that's extremely reliable in all kinds of weather, and not a thing.  Bummer.

I have heard that chants are bad when reconstituted. Try cooking them then storing.

I've found that chanties are far superior fresh, but the dried and reconstituted ones can be better than none at all. If I cook them for freezing, I'm likely to simply go ahead and eat them!
