If they have already formed heads that is what contains the flowers. As soon as they grow another week or so probably they will open up. I think it's called the hook stage. After they open and bloom the petals will fall off and you'll get your pods. Just wait a few weeks until the pods fatten up to harvest your seeds and other goodies.
Depending on what area your in it's starting to get pretty hot out. Hopefully they don't overheat before harvest time.

I think if they are just starting to get heads now it would be better to leave them until after you get back from holiday, but only if;
1 You're fairly sure that no one else will take them (see one of my recent posts), and;
2 The weather in your area isn't going to get really bad, a bit of rain would be ok.
Leaving them on the plants would make sure that the seeds developed properly and ensure that they dry out without getting moldy.

You still have a couple weeks before they flower. The heads are just forming. Once they bloom within a couple more days the pedals will fall off and show the main heads with the goodies. Just wait until it fills with latex and the crowns turn upwards and the pods should loose some of their color aprox 2-3 weeks after the petals fall off. Don't be tempted to score to early.

I bought a pack of "Peony-flowered poppies" from a superstore (honestly cant remember if it was wally world, lowes, or tractr supply) and was wondering if that was papaver somniferum? (only 2 came up, looked exactly like papaver somni, pod and all, but the mowing man cut it down )
edit: threw away the pack, i think.

You may want to consider repotting those or planting them very carefully. Wait for a cold/rainy day and moisten the soil then get them outside or in much larger pots. Try on one pot first to make sure they will survive at this stage. They are WAY too over crowded.
I know cali poppys have hair on their stems. How hairy are they? Many plants use hair to protect flowers.

Cheers Guys for the responces, much appreciated... also if I don't repot the poppies what do you think will happen? a smaller yield? as I'm just a little bit botherd just incase all roots will be all tangled up together and if I tried to repot them, that I could kill them that way too.... Pretty Hard in deciding what to do
Scruffy they are not to hairy and I have only noticed a few of them with hairs on at the minute but I don't know strain yet, as I mixed my seed up and planted and then picked the biggest out of seedlings then repotted and they have all been in there since then
