 how do you fruit out of a grow bag?

what are the diff ways to do it.
can i just cut off all the extra plastic stuff and have the block of stuff just fruit in a fruiting chamber

There a couple different ways you can fruit when your substrate colonized in a spawn bag. These are as follows:
Method 1
Fruit in-vitro (inside the bag). I personally do not recommend this method, as fresh air exchange is severely limited. The filter patch on spawn bags is great for gas exchange, but not so good for fresh air intake.
Method 2 (best method IMO)
Break the colonized substrate up inside the bag and lay out inside a mono/double tub. Firmly press the substrate inside the tub to mold into the same shape. Apply a casing layer and fruit.
Method 3
Lay the substrate as is inside a tray, cut the bag open and fruit. This method requires no intervention on your part, as you are only laying the substrate out and opening the bag for fresh air.
