Sweet smelling casing?

I cased 8 quart jars last week and stuck it in the TiT, and for about 5 days it has smelled sort of sweet, fermenty. Is that natural for a large dung casing? Becasue there's no signs of contams after a week.

You often get a smell like that, if your incubator is not ventilated. So long as the dung based substrate doesn't heat spike way high & start fermenting badly, you are okay.
Large dung based substrates can generate 10+ degree's of internal heat. Watch then carefully & DO NOT incubate at the same temperatures you can incubate grain jars at. I incubate large h/poo substrate trays around 72F. As, the trays themselves often increase the temps in the incubator to 82/84F.

Sweet, that is great news. You are so extraordinarily helpful, agar. So is ventillating my TiT recommended? Because it wouldn't be hard to cut a hole, cover with a filter, and run a computer fan.
As far as temp, the bottom of the TiT is at 84 degrees, but the casing is up off the bottom, with a quart jar on its side supporting each end. Sound Okay?

You might want to lower the TIT temp a bit. Bulk failures (besides mold contaminates)most often fail because they either TO WET & anaerobic bacterial contamination takes over, OR they heat spike, internal substrate temps get to high, again differing bacteria sets in & the substrate begins to ferment.
A by-product of which is alcohol, that is deadly to mycelium.

I scratched back some casing (60/40) and the substrate is not well knitted, even after a week. I have a feeling it may be infected by an anaerobic bacteria - I sealed up the plastic tray with a double layer of plastic wrap before incubating, which may have been a no-no.
