Is Overlay really all that bad?

I just started my very first casing grow and so far it's going really well, but I am a bit worried about overlay....
Is it really all that bad, especially when you are able to keep the RH very high but have no major condensation on the sides of your FC (just treat it like a giant cake)? Will getting your casings to fruit all at the same time really have a higher yield than if you just let it go at it's own pace? I only need to feed about three people, and last time I did cakes we ended up getting more than we could chew....
My setup is pretty damn sweet. I still don't have a decent hygrometer but I am pretty damn sure it's hovering around 90-95%RH, possibly 100%RHj; I have five inches of Perlite in my FC with three very long bubble stones submerged in the bottom covered by an inch or two of water. You would think this would be enough but the aluminum meat loaf pans that I am using fill my entire tub with only a few centimeters space around all sides so the majority of the humidity produced from the Perlite is condensing on the sides of the tins. I also have an impeller type humidifier, and a fogger attached to the same timer as the humidifier though. The fogger and humidifier turn on several times a day for about ten minutes to thoroughly exchange air, but keep a very light and cool fog in the air; there is only a light mist of water stuck to the side of my tub and very few droplets~.
The Jiffy Mix that I covered my broken cakes with is damp and cool, but it isn't soaked or collecting water condensation either.

im wondering the same thing. my casing has rhizos like a mother but hasnt pinned yet. im thinking i should have used more verm.

yea, there should be no standing water in your FC. not only will this support bacterial growth, but it basically renders your bottom 2 inches (or whatever is covered in water) ineffective. Perlite provides a very large surface area for air/water interface, which is defeated if you've got standing water
