 Help!!! Just GOT Oak Logs!

OK So today I got my hands some Oak logs that were cut on the weekend (6 to be Exact) so when I got back from work I cleaned them up a bit to get the dirt and all the Spanish moss they had
and now I need some info on what to do! should I leave them the 4 weeks that everybody talks about or do I put the plugs as soon as I get them!!
also should I keep them wet or leave them dry!
and I was thinking what do you think would be a good mushroom to grow or what combination!
well any info is greatly appreciated! and the more detailed

I would get some dowel spawn, and spawn within 2 weeks of cutting them.

Then take some soda cans and cut them into plates that you nail on to the end of the log and use a ball point pen to write the date/year and spawn used.

You could try some oysters or shitake. Those are both very popular around here and plug spawn would be pretty easy to get.
note: I believe they both grow on oak. If not, I'm sure someone will correct me.

Actually I have 6 logs and I am thinking to buy shiitake and reishi
but I live in Florida and shiitake needs cold shock (how would I do That!)
also were should I get it from sporeworks of fungi.com
