How do these substrate recipes sound for Pleurotus ostreatus?

This will be my first grow so i thought i would run these ideas by the people on this board. I currently have 5 quarts of WBS spawn of Pleurotus ostreatus (unknown strain, it came from Free spore prints). I plan to inoculate 3 oven bags with polyfill filters tomorrow and the next day. I am planning on try 3 different recipes and see what does the best. The Japanese Knotweed stems (its like bamboo but much weaker) and card board are mostly to add aeration and improve the texture.

Recipe #1
10 Quarts Coffee grounds
2 Quart Japanese knotweed stems (broken up into 1/4" x 1"-3" pieces)
2 Quart Brown cardboard (cut into 1/4" x 2-3" pieces)
2 Cups Gypsum (fine ground)

I would simmer the cardboard/knotweed stems for about 10 mins to hydrate it then squeeze out excess water and let it sit in a colander for 15 mins or so.

Recipe #2

2 Quart Dry Cat Food (I found a bunch of small bags of it in a dumpster... and i dont have a cat)

I would simmer the cardboard/knotweed/cat food stems for about 10 mins to hydrate it then squeeze out excess water and let it sit in a colander for 15 mins or so.

EDITED: changed proportions after revisiting some notes.

I am suprised this tread is still alive.
My own opinion: Oysters will grow almost in everything.
You are providing, it seems, carbon and nitrogen, providing some PH alcaline. That should work, provided some decent sterilization and temperature. The Japanese weed you mention I do not know, but if it is like tall grass or similar you can even be more succesful.
