i understand this question could sound stupid but i assume the risk.
how many blocks, baskets or columns of oysters are needed to provide customers with fresh oysters every day?
oysters flush two times, the first at 10 days and another one 10 days after. suppose 10 days for generate the grain spawn, 20 days until full bulk substrate colonization and days until the first harvest.

You'd probably need to figure out how many customers you are providing for (amount of mushrooms needed daily) and then figure out how much you can produce from one column.

Stamets has a nice layout of different rooms used for mass production and fruiting of edibles in one of his books iirc.
look into those, great reads.

How many pounds per day? Assuming a(mediocre) 100% BE, you will have to prepare x pounds of dry substrate for x pounds of mushrooms, so if you want to have 20 pounds of oysters every day you would have to prepare one straw column weighing ~50 pounds wet every day.

it takes me a little less than 3 weeks to colonize a grain jar doing g2g, and 3 weeks from inoculation to harvest on a 4 ft straw log with 4 jars. each log yields about 3 lbs, and times vary by a day or 2. You'll have to do a test grow to develop a system. There are too many variables to give a perfect answer.

Like Cryo said, it took math to figure out if you want shrooms every week, you need to make blocks everyweek. But I had a hell of a time calculating my space needs for WIP Inventory (aka incubating blocks).
Eventually I had to use empty beer cans in order to calculate how much warehousing space I need for incubating blocks. Everytime I tried to draw it out on paper it got too confusing. Blocks being added and subtracted at the same time, I couldn't figure out the total space needed. It's embarrassing to say that I was technically a Mathematics major, I shoulda stuck w/ business.
