Why do my cakes get fluffy mycelium growth and delayed pinning after birthing?

The high humidity is good at that stage, but a too high temperature causes the mycelium to continue growing vegetatively after birthing instead of pinning and fruiting.

Usually even with a too high temperature the pinning eventually occurs, but it often takes quite some longer time for this to happen, also the pin set is often disappointing.

The solution to this problem is to create optimum fruiting conditions, this means to lower the temperature in the fruiting container by moving it into a place with a temperature not higher as 75°F(24°C).
If this is not possible, it sometimes helps to cold shock the cakes.
